These ideas are great! For the portabella, tho a little more work, I'd suggest precooking in a skillet, face down, first to release that moisture before continuing as you did. Otherwise, great!

I love the bell pepper sandwich and use it when I get ready for a sandwich...I love these new additions to your sandwiches...my husband and I grill portobello mushrooms as our buns for our hamburgers and egg for the last 15 yrs and the mushrooms are just juicy on their own...love all your videos Annie and you have the best sense of humor!!! I have made the bell pepper sandwich but never dreamed of making it with a top and a bottom. Way too hard to eat. I eat, or serve it open faced and that’s plenty. Same thing with chaffles. One chaffle on the bottom is perfect. Your club sandwich looks fabulous. Can’t wait to make that.

As someone who recently discovered frying shredded cheese to make a taco shell, that Pizza Pocket looks absolutely Devine. With some low carb Marinara to dip it in? Gotta try that one.
I feel like it would’ve been easier to make lettuce rolls instead of a sandwich: same taste but less messy to eat. 😅 I definitely gotta try this!

Not sure how it would work in the air fryer, but when you cook the portobello mushrooms, flip them upside down on a rack with a cookie sheet below it so the liquid drains below it

Hello I just run across your video I really like your recipes. I'm not really trying to loose weight or doing keto, but cutting sugar and carbs for diabetic purposes. My question is how can I use your recipes and have the calories to maintain my weight 155 lbs and still reduce the sugar and carbs. I've asked several keto UA-camrs ,but never got a response . I would try cooking the portobello first, then build the sandwich and broil the cheese for just a minute.

Yes! You definitely need to cook well. Remove a good bit of the gills first, then spritz with avocado or olive oil. Grilling works great as it allows the juice to escape. Air frying works, with the gill side down to drip for the first part of cooking, then flip to crisp. And cooking in the oven works the same way.
That mushroom sandwich looks so good. The messier the better. ☺️ Definitely going to try all of these. Just need to get one of those waffle makers
If you want to make sandwiches (with a top and bottom) or are okay with a bigger one you can cut in half, you can use a regular waffle iron. I have a few of the mini ones (and had got rid of my waffle maker 10 years ago because I was keto and never used it) but got tired of having to mess with 2 or wait for the second chaffle to cook. For Christmas I requested a regular waffle iron and, since I live alone, I asked for a small one that makes 2 square waffles. It's perfect! If you have a bigger family or want to make more and store in the fridge or freezer, you could buy a bigger one.

I've a couple over the years, but went keto about 15 yrs ago and ditched them. Then they invented chaffles a few years ago... 😂 The small waffle makers are cute and fun, but tedious if you're like me and wait until you're hungry. 😉 I have found nearly every chaffle recipe makes 2 and they fit they fit even better in a regular waffle iron without running over because it's just a teeny bit bigger. Good luck!

We just call them rollups, usually it’s just lunch meat and cheese, but sometimes we roll it up in leaves of Romaine lettuce.
I use slices of ham and cheese as the bun to my ham and cheese sandwiches. Yum!

Seriously? I haven’t missed bread that much. I miss ordering easy pizza though 😢. I make my own with fathead. It gets the job done. Carb cravings often mean you’re getting some sneaky carbs from Processed “keto” food. Net carbs are BS when they just add 15 grams of fake fiber to offset the 20 carbs to say 5 net carbs. Frankenfood. Go 20 total carbs and your glucose/ketones will do much better.

But I've been doing 'clean Keto'; my sugar addiction is gone and so are the cravings. I make my own keto friendly baked goods and all, trying to control the ingredients... BUT, they will NEVER taste like the stuff made with white sugar & white flour, sorry. I'm Cuban, so I miss traditional Cuban food like white rice and black beans with tostones (plantains) AND nothing beats warm, toasted Cuban bread with butter in the morning! Anyway, had to get all that out! 🤦🍞 🥐🥖🍝🍚🥟🍰🍩😄😄
There's also the fact that some people are bread people and others just aren't. I was never a big bread eater and often ate sandwiches open face or removed huge chunks of buns and I never ate the crust around the outside of pizza. That made keto a snap for me because I was often skipping the bread anyway and I never missed it. Now popcorn and crunchy corn taco shells are another thing altogether! 😂 I miss them like crazy.
It's not a matter of eating too many carbs or eating sneaky carbs. I plan my foods and track my food minutely every day so I know exactly what I'm eating. I eat very few carbs. And I'm sure Emmanuel King is watching the carbs as well. Sometimes it's just your brain wanting something you loved the flavor of. It's not a biological carb craving, it's a mental memory craving.

Also search egg white pizza crust. It is so low is calories and fluffy like frozen pizzas. My kids ask for it.
I was waiting to see you eat the club sandwich but you didn't. All my lettuce wrapped sandwiches and burgers fall completely apart after the first bite or two, even with parchment wrappers tightly tucked. How in the world do you keep them together?
You just have to work your fingers!
One that may work for you is using romaine lettuce. Each leaf makes a separate equivalent to a half sandwich, so you need two to make a whole sandwich.
For a BLT, lay your romaine leaf out so it cups upward. Spread your mayo on one side of the center rib (I have always eaten butter on mine as well and spread that in the other side of the rib. Then lay a couple of slices of bacon along the side with mayo. Slice your tomato in slightly thicker slices and cut each slice in half to make half-moon shapes. Arrange a few, lined up along the rib, in the buttered side. You now have a canoe shaped BLT that you just eat from one end like a hot dog. To make it a "club", wrap a slice or two of your turkey or ham around the bacon or just fold it lengthwise and put it between the tomato and the bacon. Don't forget to make two for a full-size sandwich equivalent.
I sometimes make my burgers in regular thickness, but longer, narrower shape to fit into the romaine. If it seems to still be too big, just overlap three romaine leaves - one in the center with one on each side meeting at the center rib of the middle one. Condiments could go on top, but I always put mine on the sides of the lettuce boat first.
Two tips - and these go for less messy BLTs or any sandwich in general (even with real bread and buns if you cook for others). Keep your tomato as far from the mayo or other saucy topping as possible - the tomato juice will thin out the mayo and make it drippy. Roma tomatoes may be a bit less flavorful than a beefsteak tomato, but are still tasty on a sandwich and have more meat and less pulp, which means less juice and fewer drips.

These sandwiches all are using unhealthy processed meats - the ideas of stacking ingredients w/out using bread as what holds the sandwich together. But it destroys the purpose of the keto diet if you are using cruddy ingredients that do not support good health.

Not really. Some of these have more protein and fat so they will keep you full longer. A normal sandwich is high in carbs and will cause you to crash a few hours after and be hunger faster too.

I’m not saying all of them are less calories but the turkey wraps and keto club are definitely less calories than if you added bread.
calories are not a thing when your on keto, glucose response from high carb foods like bread/starch/sugar is the thing we avoid.
