Been in restaurants for nine years since I dropped out highschool and there is always an "arrogant" person in the business.

I think everyone should work in a kitchen at least once, it is really a crazy industry.
Bima C. Bhaskara No it's really stressful and hectic. Back of house barely makes anything for all the work they do and front of house is very clicky and they usually think they are above BoH and can order them around. Being a cook is tough, very demanding and a lot of work and hours for very little money.
No Kooks And still we do it. That tells you only people with passion and desire to learn go into the proffession. You have to forget the money and long hours and just give time and energy.Hence most chefs you see are creative and passionate and you will hardly meet a dull chef.
Replace arrogance with confidence, then this scene is excellent

He is not lying about having mental toughness in the kitchen. When orders start flooding in its go time.
not to mention when things get bad, and it goes to worse and everybody is one sent-back order away from snapping, you have to be of a certain mentality if you don't want to end up breaking down.
Especially in a higher caliber restaurant with a celebrated head chef, a bit different kind of beast.

If any mistake happen then it's finger pointing to someone, that someone will defend themselves no matter what and then it turns into an argument. It'll keep going back and forth because of the arrogance until someone on the outside decides who was really in the wrong.
With all due respect to the writers, because this was an excellent movie, but it's not arrogance, it's Confidence.

As a chef of 11 years I have worked in a lot of good restaurants, some excellent restaurants and some crap ones but one thing I always found was arrogance or cockiness never flew in the kitchen. You should never have have to adopt arrogance to be a good chef. All you need to do is observe, listen closely, work fast and ridiculously hard and always remember to say "Yes Chef!"
Agreed. 16 years as a chef now. Then again this is a movie. What he should have said is not to be arrogant, perhaps more be able to stand on your own two feet instead of being a pushover.

@Theking10 in the past this held true yes. Much has changed over the years. I thin you need to understand just how tough it is in a kitchen. You either toughen yourself up because you love the job or you quit because it is too much. No shame in that because it is extremely intense, long hours and low pay.
Bradley Cooper always eats food amazingly haha. Reminds me of when he ate eating some food in Limitless.
you know that is curious because people are never hungry in the movies because the writers throw them a lot of things to do but when you see people eating you feel the character is more human, if you remember there are very touching scenes where people eat food like Limitless, Oldboy and Jurassik park.

Working in the back of the house is an intense experience. I worked front of the house for a few years in college. You have to have your head in right to go to the back. If you screw up, they will tear you apart. I can’t imagine the intensity in a Michelin star restaurant, with a world class crew.
And yet, I've worked front of house more than back of house (did a great job), and chefs are scared to go up front.
All arrogance is is a flag to denote that you're fragile. Giving a crap and standing up for yourself are not arrogance.

One such way would be bearing the knowledge that you are greater at something than most. When you know, not think but KNOW you are greater at something than most, it's honestly perfectly natural to feel superior because, in retrospect, you are.
@@nathanmahoney6223 You should really check out the Dunning-Kruger Effect, "Inferior" people are usually more confident in themselves than experts. Also, the moment you believe yourself to be so much an expert that you are "superior" to others, you've already forgotten the invaluable skill of learning from others, being humble, and just being a decent human being. If you cant do those things, it hardly matters how good you are if no one wants to be around you.

I liked this movie! If you compare this scene early in the film to scenes near the end you recognize a huge character arc with Adam (Bradley Cooper's character)!

My favorite scene in this movie is the Burger King scene where he argues that it’s modern day peasant food. I thought that was an excellent point and it was hilarious that Burger King was okay with appearing in this scene .
They know what they are, they're not fooling themselves thinking they're a gourmet restaurant. They're a mass restaurant. It's publicity. The name gets mentioned. It's advertising. I'm sure BK among others were in a petition to see who they would have in the movie and BK for whatever reason was chosen.
It's very different in poor countries though where properly prepared food costs less than burger king

It's completely unhealthy, lacking in countless vital nutrients and vitamins and is painfully addicting if you let it be, of which maaany do and why we have all the health and weight problems that we have in this country. And it does appeal to mostly poor and under-earning people, again in terms of USA society and citizenry, after all. Even midscale restaurants are much, muuuch better to eat at, even if they're muuch more expensive. Doesn't have to compare to a full-fledged, 5 star eatery. Anything is better than fast food. That's why it's called *fast food* lol. Home cooked meals and solid quality ready made meal prep kits are the way to go these days. Fast Food is at the bottom and always will be.

As a younger man I could hang in the kitchen with the best of them. As an older man removed from that scene I do not know how I managed it. A part of me misses it and another part never wants to revisit it. It is stunning how close to reality this movie is. Over blown at times of course for the viewers pleasure. But damn close all the same.

People please do not take this scene as something to learn from. The character's point is not true.
Without ever having actually watched this movie, this is probably before his character arc where someone either humbles him (Bradley Cooper), or he has some sort of breakdown (ie burnt). This is his unhealthy attitude towards being a chef but the movie probably ends with him realizing you need empathy and other traits to be continue working at a high level. Now I’m going to watch the actual movie and see.

I work in restaurants and arrogance isn't really the word for it. In a rush time, your chef will demand and won't ask. Sometimes, it can feel personal and mean, but it's only because they don't have time to say "excuse me, can you do that pls". So you don't need to be arrogant, but simply tough minded.
So what’s the time difference on yelling at somebody for something and “excuse me can you do this please” save a whopping 1-2 seconds of time. You don’t work in a kitchen and have only seen clips of kitchen nightmares and Hell’s Kitchen. I used to work in a kitchen and there’s always time to be respectful. Always was.

When we have tons of orders in a rush time we try to save as many seconds as possible to avoid delays. So if my chef says "2 tartare steaks" or "give me 3 salads" I answer "yes" and not "uH yOu, FoRgOt To SaY pLeAsE". Dude probably took 3h to give extra ketchup... Explains why you usED to work in kitchen

People want to say that "confidence" is enough, but sometimes in life you have to strut like a rooster.
"Strutting" is the biggest indicator of a lack of confidence. Look at ex-prisoners, you can spot them by the pompous strut which says very loudly, "I went to jail, come at me" but masks terror of ever going back.

I love this movie, and I like that Adam gave the lad the opportunity, and maybe I'm nit picking, but would u REALLY get hired to work in one of the best restaurants in the world for the worlds greatest chef because you can make a great sandwich? It depends. A meal and its quality can speak books about a chef's skill.
I’d argue that it seems like the kid has a great palate for flavor combinations and he’s obviously young and hungry to succeed. Plus he looks at Adam as a god, so in his mind he knows he can push this kid hard without question, he’ll get maximum effort and commitment out of him, and he’s developed enough technique and taste to hang and develop in a high pressure kitchen. Now he just needs the confidence to defend himself against the pressure. I’m not saying I’m right but being around the restaurant industry for 10 years now, it makes sense.
