I am vegetarian (not vegan) for 20 years and I’m still trying to learn to eat better! I really appreciate vegetarian recipes from you because your recipes are sooooooo good! I’m making lemon pasta tonight!!!
Almost broke the avocado oil! Even I went”NOOOO!” That stuff ain’t cheap, plus the mess would take forever to clean! Thank you for another great recipe, Sam. ❤

Looks great, Sam. I recently got a 2 teaspoon cookie scoop to make mini meatballs for Italian wedding soup. I make them in batches, bake, flash freeze, then bag them up in quart size freezer bags to store in the freezer until needed. I can bet my carnivorous hubby will "need" some added to his bowl of your vegetable soup recipe 😂
Great Recipe. My Mom made Vege Soup very similar to this. She called it Poor Man's Soup because it had no meat. If course now the veges are expensive. Thanks for this, brought back good memories.
I love this soup and been making this soup for years. I change up the flavour with spices, making it Italian or Mexican or whatever. We all love it and it's in heavy rotation in January, when we all want something warm, filling, and with more vegetables than we ate over the holidays. I'm looking for a good recipe for posole verde, if you are looking for other soups to work on...
As a long-standing member of Team Carnivore, I’ll braise then remove stew meat before starting the veggies and let them pull the beef fond from the pan, then add the meat back at the time the stock is added 😋 Thanks for the recipe‼️👍🏻👍🏻
we got 3 inches of snow yesterday in ohio. 4 more expected tomorrow. My BF just said " let's make vegetable soup! " so i'm not loving going to the store in 20 degrees. guess i'll bundle up and go because i so want to make this soup!

Hi Sam, I love your videos, Happy New Year 🎊 I checked out your beef stew recipe, was wondering if there’s a substitute for the wine or is it optional ? (we don’t use alcohol)
Almost exact to my vegetable beef soup...just cut beef into cubes the same size as veggies. Let beef get to room temperature...then sautee it first and add other ingredients as your recipe. I never measure quantity of beef, but always use the london broil cut...so the meat content varies. The beef adds to the soup broth, so no need to use beef broth or stock. Tip: Cutting the beef is always easier if it is partially frozen.

Not necessary here. By cooking them the way shown you end up with a more flavorful broth/base AND more flavorful, perfectly tender potatoes. Of course you are welcome to modify to your liking but I recommend trying it this way at least once first! :)
