whats happening in sinking funds?

We are a family of 4 from Norfolk and we individually budget and cash stuff. In December 2022 we became debt free except for our mortgage.
This year I hope to full fund are yearly sinking funds as well as Christmas aiming to get 1 year ahead on all yearly bills with sinking funds as well as doing more savings challenges to meet my yearly goals. This year I am hoping to plan for both my month fixed and variable expenses. I look forwards to your suggestion on which one to complete. While also enjoying more family time together as well as planning for a holiday.
We are following the David Ramsby step as well as other youtubers.
Step 1: Save $1,000 for your starter emergency fund. - completed
Step 2: Pay off all debt (except the house) using the debt snowball.- completed
Step 3: Save 3-6 months of expenses in a fully funded emergency fund.
Step 4: Invest 15% of your household income in retirement.
Step 5: Save for your children’s college fund.
Step 6: Pay off your home early.
Step 7: Build wealth and give.
