    The ever humble carrot gets transformed magically into the most lovely, velvety cream soup right in a Vitamix blender. This is a vegan recipe that uses no dairy, no oil, no salt and no nuts! Roasting the carrots, onions and garlic, gives it a real flavor boost. An oven roasted sweet potato adds another level of sweetness, flavor, and works as a thickener as well as adding a creaminess. A little fresh ginger root and a dash of curry powder give it a little extra zing. This soup is simply packed full of home made goodness!

    A simple and easy soup. But i have read if we run the blender and ingredients get hot in it the nutrients are lost. How true is this?

      Here is an excellent article from one of our local health care organizations. The closing paragraph is this --- "Regardless of how you prepare vegetables, they are full of fiber, antioxidants, vitamins and minerals that can help maintain good health. There are benefits and disadvantages to cooking your vegetables, so prepare them the way you like, so that you are more likely to eat more of them!

      As for Carrots... "cooked carrots have more beta carotene, an antioxidant that can be converted to Vit A and improve bone, eye and reproductive health. And the amount of lycopene, a caroteniod that has been associated with reduced incidence of heart disease and cancer, increases when tomatoes are cooked."
