Every 4-5 years NZ Beech trees produce and small sweet fruit with a large seed. When this happens the Rat / Mouse population explodes. Its called "Masting" can be up to 7 years or after a cool summer. Sometimes a couple years in a row. This is what gets the Trout feeding. Make sure you time your trip well...

They do eat mice. Every so many years there is a natural bloom of mice in certain parts of NZ. They do swim, so the trout catch and eat them during these bloom years. There are often so many mice around that cats, glutted, ignore them.
2020, the year of Covid, so not too many fishers around this year, or next. There is a mouse lure that fishers use on some rivers, it looks very realistic.
One invasive species preying on another. I suppose it's some sort of remedy. Yet, the angler returned the fish to its stream, where it will no doubt reproduce, making more invasive trout.

I can’t speak for all of New Zealand but the fish in this river system look to be hatchery stocked trout which are often bred to be sterile to minimize environmental impacts so it’s unlikely these fish can reproduce and will just die out with time. Plus this is a trophy fishery and they’re usually heavily managed and it’s considered customary and proper etiquette for fishermen to let trophy specimens like this one go.
