The best way to confirm the owner of the watch is to have them tell you the serial number, it is laser engraved onto every apple watch. The owner should know it, it's printed on the box and it's linked to their apple account, if they don't know it, passcode would work too. But I personally would not tell strangers my code, since after unlocking, one can unlink it and make it theirs.
