    I grew up about 20 minutes from Santa Maria. Tri-Tip was a staple. Grilled garlic bread, ranch style beans, and salsa, one of the best meals of my youth.

    Now that's how you do it! I'm from Santa Barbara and been doing it like that for years. Even had a couple grills customized from Santa Maria. I go twice a year to bring a truckload of Red Oak back to Vegas.

    I learned how to bbq tri-tip when I went to Cal Poly, SLO after joining Alpha Upsilon in '84! A dry rub on an open oak flame, adjustable rack fire pit! It orginated in Santa Maria by the Spanish and Portuguese ranchers! Add the beans, linguica, garlic bread and ice berg lettuce salad and lots of beer! : )

    Santa Maria style TriTip the best! Had NEVER heard of TriTip cut til we moved to Central Coast CA in the early 70s. Its way just an unknown cut....but love it. Even like to slow cook on flat pan in oven for a 90min or so....simply salt if you dont have other seasoning. Slice about 1/2inch thick...quite tasty with a good salad or a corn on cob. No other seasoning needed. Perfect meal.

    I just bought a Santa Maria style grill...will light it up for the first time this weekend...as I live in sunny California.
    I love tri tip...a very underrated cut of meat...but cooked right, it can't be beat.

    This is THE recipe and method for Santa Maria style Tri-tip. If it's not a Susie Q dry rub over red oak, it's not SM tri-tip. Fresh salsa, ranch beans and buttered garlic bread are also a must. Delish!

    Costco in Santa Maria sell the SM BBQ pits. Susie Qs Albertsons in Santa M. Tri tip can be bought ready made if you don't want to do it yourself from Albertsons but doing it yourself is awesome once you master the grill! Lots of vendors around the city selling on a weekend for fundraisers.

    Salt, garlic powder, and black pepper...they do something magical, perhaps spiritual, to the tri-tip. And over red oak (coast live oak), you have one of California's best foods.

      I am from San Diego I have been grilling and smoking good Costco tri tip for many years....i always throw a Mexican touch to my rubs and add guajillo ( pronounced waheeyo) chili powder to the salt..pepper and garlic and let it sit for three days before I cook them...really good.

    One of my favorite uses with Susie Q is to sprinkle some of it on a freshly made hard boiled egg. It's the bomb!!

    Raised in Santa Maria.... SM style BBQ is the best whether it's tri-tip or chicken. I still order the dried pinquito beans shipped to me in Oregon 30 years later.

    This is great! I tried this tri tip at Santa Maria, and it is the best! What happened to all those BBQing in the main ave ? Last ime, few years ago, one of them told me, it was for charity purposes only. Only one guy was BBQing. It was very sad for me. Thanks for sharing this video, good job.

    I know you like rare but at the farmers market in LA they cook it to well done but they slice it really thin and put it on a roll and it taste great.

    tri-tip, if cooked properly on a bbq, imo, is way better tasting than any sirloin ... and Santa Maria style bbq's are something that I believe everyone should experience, at least once, in their lifetime.

    wow doing ir right!!!!! :) Garlic powder salt n pepper and coat very very well that's allllll you need!!!! marinade is a cardinal SIN!!!!! but hey tri tip STARTED in Santa Maria so of course they would know how to do it!! :)

    For those of you from Santa Maria, Valley Christian BBQ! Best side walk bbq in the world! No where else have I found side walk bbq's. Not in the U.S. or world for that matter.

    closed lid would make it hotter, that way it would PROBABLY finish alot quicker. This way you get a nice crust n flavour and its still medium rare

    I wish that Paul would do a good challenge like Iron Chef or Chopped, against Aaron Franklin of Franklin's BBQ of Austin. Instead of each doing their own specialty they reverse roles. Paul does brisket and Aaron does Tri Tip then the judges decide who's is best.

    Honestly the only difference between a saute and a sweat is medium and high heat.. So loosen up and live a little as for bbq and grilling.. there all wrong, but were forced to listen to people claiming that they are bbq'ing on a grill ( impossible) and grilling on a bbq.. ( possible but wastefull). For the record bbq is done over low heat with smoke(hardwood as softwood gets nasty tasting) and can take anywhere from 4-48 hours. And Grilling is done over high heat generally with a grill.

    Not saying this guy can't cook but one key step to storing the flavor with the spices is rubbing down the meat with olive oil helps keep the rub/spices intact....cool video ty

    .45 min to 1 hour ?, I wish they would have said what the Internal Temp. was......I cook mine to Internal Temp. of 135f for .30 min (med rare)

    I'm from Santa Maria 20 yrs ago I moved to Oklahoma bout 15yrs I haven't any tri tip. Until bout 5 yrs ago I found a meat market so I talked to the owner bout cutting me a tri tip he looked at me like I was crazy so he did the cut for me

    Susie Q seasoning is so overpriced. It's easy enough to make with your own salt, garlic salt, and black pepper. REAL Santa Maria BBQ is Top Block as well, but Tri Tip has taken over because it's cheaper.

    RobertLewis2002 If you do not understand the comment watch foodtv or listen to people spew their 'Knowledge' by misstating(sic this is how it wanted to spell it) grilling(high heat) and bbq (slow with smoke).. If your being "forced" to watch video's you need to seek professional help. Check your glasses or pop your eyeballs out and clean them if it helps you read what I said.

    Sigh. Any decent chef knows that they would get their fingers shortened, Yakuza-style for confusing a saute with a sweat. And that's as it should be - they are two different cooking techniques.
    So, I am saddened that otherwise good chefs still confuse barbecue with grilling. I knew this wasn't barbecue the split second he said red oak. Red oak is fine for grilling - but over the length of time a barbecue takes you'll just get a mouthful of bitter tanins.
