  • Here’s how I made my starter from scratch! I’m focusing on how to create the starter and the repeating process of feeding and discarding- it can all be confusing so please ask questions!
    I also don’t usually keep the discard until my starter is mature. I just fill the discard jar up and pitch when it’s full, I also leave the discard in the fridge.

    I've always been daunted by the amount of info when it comes to starter and the resources I come across always make me feel overwhelmed and stupid...thank you so much for making this incredibly approachable, doable and "simple"...I'm so happy that Kris had you on her channel and you're helping us out; especially those of us who are viewing outside the U.S.A (I'm from Canada)

    When I was a child, my mom told me her starter was named Herman and we had to make sure to feed him every day😂. I thought it was an alien creature.

    Thank you for the starter video I have never made sourdough before. One question what do you do with the discard for the starting 20 days?

      @@bear788 great question! Before the 20 days, you can either throw your discard away or save and dilute with water to feed plants. Thats what I did! Then I kept my discard for discard recipes

    I have a few questions one of which is to do with cooking sourdough bread itself (dunno if you'd be willing to answer that here if not its fine)
    1. we feed it the exact same amount again every day, while developing right? 100g water and flour after discarding half of the original? (just to make sure)
    2. is there any way to tell if its mature, or close to being mature? like any signs to look out for?
    3. are there any signs to look out for that its gone wrong? so you know to start over
    and the bread question:
    I noticed people use a dutch oven when cooking sourdough bread, is it possible to cook sourdough bread without one of those? they're a little on the expensive side here

      1) Yes! You will feed the same ratio every day after discarding
      2) there are a few ways to tell if it’s mature, however they are not always 100% accurate. The best advice I can give is to make sure your starter is consistently rising and falling within a certain amount of time after feedings. Then just try and make bread! Worst that can happen is your bread doesn’t rise and you wait a few more days to use your starter.
      For the bread question- yes! You can bake sourdough with a Dutch oven. There is a method called open baking, however just like anything else sourdough related there’s an overwhelming amount of information on their. If you send me a dm on insta (if you have one) I can better assist you by figuring out what appliances you already have and give you some tips!

      Bread Related questions-
      1) I make an Einkorn Sourdough that is really fun, and I do a lot of inclusion/flavor loafs. My best selling bread locally is my OG Plain Sourdough, and Jalapeno Cheddar!
      2) Not a bread but I want to learn how to do croissants!
      3) After you learn what your starter needs and the environment it will thrive in they are pretty resilient! For a cooler kitchen or area I would recommend making a little jar snuggie with a dish towel. That could help keep your jar warmer!
      4) There are different kinds! It all depends on what flour you use as your base. This is a great video idea!
      Content/Channel Qs-
      1) I have a lot planned for the future. I would like a good mix of educational and engaging/fun baking! I teach classes locally and my approach is simplicity. I would like to have edu videos for different subjects on sourdough. My fun baking ideas are all the things you can bake with sourdough, and "does it sourdough", and probably vlogs!
      2) He has shouted me out on insta! I just started my UA-cam and Kris shouted me out on her channel. My brother is going to help me out with the recording and setup in the future and probably shout me out on his YT.
      3) Caleb is going to help me with editing and is letting me use an actual camera and better set up for future vids. As of now I am going to try and learn my own editing until I hopefully get to the point of needing an editor.
      4) Yes! we all have b roll and I will be happy to share it.
      5) This is a great idea and I am actually going to get started on this soon!

      1) Yes! I love cooking and basically cook everything at home and from scratch or locally grown as possible. I am a big farm to table advocate. I just taught myself how to bake fall of 2022.
      2) I have followed a lot of SD people on insta for a while. No locals but that is a great idea.

    When I started my starter I read sooo many different methods, each claiming to be the best. Some said yeast is already present in nearly all flour (perhaps not in bleached?). Some said to put it near an open window with cheesecloth as the lid. I wound up adding a pinch of non-instant yeast from a packet. I was nervous to simply "leave it to chance". Have you ever had one fail to start or do they all eventually find their way?

      @@isaacinnis this is a great question and really why I love teaching people a simple method of the basics!! Yeast is present in all unbleached flour. And every starter is going to need a little different care depending on the climate you are in and the environment of your kitchen. Starters a very resilient and usually do find their way. My first starter failed, but I was using bleached flour. All my other starters have thrived! It’s just a learning curve for what works best for you

    Loved you and Kallmekris's video. HEB is great. I loved going there when we were there for 6 mos a couple of years ago. Can I use this starter to make a friendship bread starter from? My mom used to make friendship bread but was always given the starter. She told me that is why its called friendship bread because you share the starter with a friend. That bread was so good.

      Thank you! I am so happy you enjoyed our video! Yes, you can totally do that! I am not super familiar with the recipe, but i give my starter out to people all of the time. Having an established starter is so universal because you can make way more things than just sourdough bread!

    Great basic instructions- Its really easy to get overwhelmed! When I have attempted to make a starter previously it was super liquidy after the second day, and third days- is this because it wasn't being fed enough? Thank you!

      Thank You! Yes, if your starter is very liquidy, try doing a feeding every 12 hours for a few days! Same flour/water ratios and discard before each feeding.
      Baby starters go through a lot of phases, but in the end they usually work out! Just takes time as well as trail and error

    When starting a sourdough starter, should the mason jar first be sterilized like with canning? Or does it matter? Came to your channel from Kallmekris and very happy I did. I’ve always been interested in sourdough but I could never find a channel I liked until now. Would love to see a cookbook in the future.

    I live in MA so a bit cooler though can get humid up here. Now this is just for sourdough bread correct? I wouldn't use this for say a rye bread... as an aside I love wiener dogs!

    Hey, that was a great video. Best wishes for your UA-cam journey. I found you from Kris' UA-cam channel. I have a suggestion, and I hope you don't mind. Can you use a different microphone or determine what is wrong with the one you are now using? While watching your video with a headphone, I noticed that the audio was not balanced, with the right headset being louder than the left. It could be a setting issue or because you're shooting it on your phone. I'm not sure; I'm not really into technology. Checking other UA-cam videos confirms that not my headphone's problem. I mean well, and I apologise if I offended you. I look forward to watching more videos from you. Stay healthy, safe, and keep baking.

      I have personally never used a bread maker, but homemade is homemade! If using a bread maker is what works best for you, then keep doing it!

    I just had a question regarding your experience with your starter. I’ve only ever had store bought sourdough bread, but know I like a really strong acidy/tart/fermented note in the sour dough. Is there anything you suggest at the starter stage to help develop or select for this (if even possible) or is this more something with the bread recipe itself and what you feed the yeast then?

      Love this question! The sourness develops during the cold proof stage of making the bread!
      However a newer, young starter is not going to be as strong but will develop its own flavor profile as time goes one.
      Store bought sourdough also adds citric acid, which heightens the sour flavor.

      I do! Discarding is crucial for a healthy starter!

      This is a really good question! Discard can get very confusing on the internet so i did not really touch up on it in this video.
      After I have a mature starter i do keep the discard. You do not have to feed or care for the discard like you do your starter..it stays in a jar in the fridge! I use it for discard recipe, or giving it away to friends if they want some starter. However, if you do not want to do that you can throw it away!
      My previous video explains how i feed my mature starter to eliminate having so much discard on hand. I am going to do my next video just explaining discard!

      Great question! I have never made a starter with gluten free flour-however, king Arthur has a good GF flour and instructions on their website to start a GF starter.

    Please please please, do you have a great recipe for raisin cinnamon bread? I am addicted to it and have tried several recipes (I do have a bread maker but have also made bread by hand). This is the only bread I have not been able to conquer. I’ve tried several recipes and then tweaked them, but nothing comes out tasting as good as Pepperidge Farms and I’m so disappointed.

      Totally get it! I am actually working on getting the recipe down. The integrity of the dough is always affected by the cinnamon/sugar or so it seems. I will post once I have a good one!

      Great question! I did throw mine away the first week or so, then i started keeping the discard the last week as my starter became more active.

      I keep the discard in a jar and once the jar is full I throw away. This is only when you are starting a starter- once it’s mature and active you can keep the discard and use it in recipes! I have another video just talking about what to do with discard 🙌🏼

      When you are starting a starter i throw the poured off portion away once the jar is full. After my starter is mature I keep it.

    My question is, if you are making starter, when you initially pull some out from the jar after 24 hours, could you feed that too and have two jars in case one goes wrong? I feel so bad if I went two weeks taking care of yeast babies and then it just died or went off.

    A good video would be how to tell when your sour dough has gone off, I get really confused, I have spent soooo much money on sour dough starters because I can't tell, everyones sour doughs look light and clean, mine eventually goes dark and gets that clear liquid on it and I am not sure if I am not feeding it fast enough or maybe I was using the wrong flour or I dunno. It would be really nice if someone made a clear video on how to tell if you have murdered your sourdough starter.

      @@Cupcakethecruel great video idea!! If your starter is developing a gray liquid, it’s hungry and need more frequent feedings! And perhaps a larger volume of flour/water when feeding

    Omgoodness I didn’t know that you could use your starter for all of those baked goods!. Ty so much for educating us. I am so happy that I found you. With the discarded sourdough starter, can you feed that one also and have two going? If no one else has told you today you are absolutely gorgeous btw… not that that has anything to do with your craft.
