    Mandazi puff puff is a delicacy, taken with tea in many African countries.
    Loved in Zambia, Malawi, Burundi, Rwanda, Kenya, Uganda, Ghana, Nigeria...
    To make mandazi, the popular East African fried dough snack, you'll need:
    Ingredients:
    - 2 cups all-purpose flour
    - 1/2 cup sugar
    - 1 teaspoon baking soda, or Yeast
    - 1/4 teaspoon salt
    - 1/4 teaspoon ground cardamom (optional)
    - 1/2 cup coconut milk, or any other milk
    - 1/2 cup water
    - Oil for frying
    Instructions:
    1. In a bowl, mix the flour, sugar, baking powder, salt, and cardamom (if using).
    2. Gradually add the coconut milk and water, stirring to form a soft dough. Adjust liquid or flour if needed to achieve a non-sticky consistency.
    3. Knead the dough on a floured surface until smooth, then cover and let it rest for about 30 minutes.
    4. Roll out the dough to about 1/2 inch thickness and cut into desired shapes (usually triangles or squares).
    5. Heat oil in a pan for frying over medium heat.
    6. Fry the mandazi until golden brown on both sides, turning as needed.
    7. Remove from the oil and drain on paper towels.
    8. Serve warm and enjoy your homemade mandazi!
