    ** Creating a Sourdough Starter from scratch **
    What you will need…
    A set of kitchen scales
    A glass jar with straight sides
    Plain white unbleached flour
    Bottled water (some say you can use tap water)
    A fork to stir it
    Lots of patience!
    Note: You may get a rise on the 3rd or 4th day or even after that, this is known as a false rise, don’t be fooled, it may not rise again for a few days after that, or it may keep rising daily, don’t give up, keep going, don’t go making bread until at least day 12 or later.
    Day 1
    Add 50 grams flour and 50 grams of water to jar and stir it up well.
    Clean down sides of jar and put a rubber band on jar at level of the mix so you can judge how much it has risen.
    Day 2
    Add 50 grams flour and 50 grams of water to jar and stir it up well.
    Clean down sides of jar and put a rubber band on jar at level of the mix.
    Day 3
    Add 50 grams flour and 50 grams of water to jar and stir it up well.
    Clean down sides of jar and put a rubber band on jar at level of the mix.
    Day 4
    Depending on the size of your jar you may need to discard (throw some away) before todays feed.
    Whenever you have too much in the jar, just discard around half of what is in it before feeding.
    Then…
    Add 50 grams flour and 50 grams of water to jar and stir it up well.
    Clean down sides of jar and put a rubber band on jar at level of the mix.
    For the next 4 or 5 days we are simply feeding same as above and discarding when you have too much in the jar.
    By about day 10 or 12 if your starter has been rising consistently daily for the last 3, 4 or 5 days then you can attempt to make bread, you have succeeded, congratulations, well done.
    My advise is to keep feeding it daily for minimum of 2 to 3 weeks to help build up the strength in it.
    In between feeding keep in the refrigerator with the lid on properly and take out the day before you want to prepare the bread and feed at least twice letting it rise and fall between feeds.
    When it has doubled or close to it you can make bread. In saying this what I do at home it feed it, let it double in size, then pop the lid on and put back in the fridge. Then the next day or even the day after I use it straight from the fridge to make bread. It works just fine like this as it is like giving it one big feed!!!

      Hi Joyce, firstly thanks for watching. Good luck with the starter, feel free to email me if any questions. With bread it can depend on house temperature, in Winter I use more, probably 100 or 120 grams whereas in Summer when its warmer and bread rises quicker I may only use 80 grams, this is per 500 grams of flour, 340 grams of water and 10 gram of salt.
