How to Create your own Sourdough Starter

- A short time ago I was asked by one of our subscribers if I could do a create your own starter episode so here it is.
Below are the steps to create your own starter. We hope that you will find this helpful. We are also going to include the recipe for the single loaf of sourdough sandwich bread. Thank you again and please like the episode if it is of interest to you.
Day 1: Begin your starter
In a small clean container add the following ingredients and stir until completely mixed through.
50 grams Filtered Water
(Room temperature)
20 grams Wholegrain Flour
(We are using whole wheat)
25 grams Bread or Unbleached
All-purpose Flour
Cover with loose lid or coffee filter with an elastic and set aside on counter until day 2. Set aside for 24 hours on counter.
Day 2: First Feeding:
In a small clean container add the following ingredients and stir until completely mixed through.
50 grams Filtered Water
(Room temperature)
25 grams starter (from Day 1 jar)
Discard the remainder of starter
15 grams Wholegrain Flour
(We are using whole wheat)
35 grams Bread or Unbleached
All-purpose Flour
Cover with loose lid or coffee filter with an elastic and set aside on counter until day 3. Set aside for 24 hours on counter.
For days 3 to 8 repeat the Feeding below (the amount of days vary depending on the temperature in your house) Although I show different flour amounts each day, the only thing that matters is the total amount of flour is 50 grams. For consistency we will go with measurements below for daily feedings for day 3-8 depending how long it takes your starter to become active.
In a small clean container add the following ingredients and stir until completely mixed through.
50 grams Filtered Water
(Room temperature)
25 grams starter
Discard the remainder
20 grams Wholegrain Flour
(We are using whole wheat)
30 grams Bread or Unbleached
All-purpose Flour
Cover with loose lid or coffee filter with an elastic and set aside on counter until the next day. Set aside for 24 hours on counter.
As soon as you feed your starter and it doubles in size you can go ahead with putting that starter in the fridge overnight.
On Bread day first thing in the morning do Feeding, cover and rest for 2-3 hours until bubbly, doubled in size and ready to us
In a clean bowl mix together:
90 grams filtered water
90 grams starter
20 grams whole grain (your choice)
70 grams bread flour or Unbleached all-purpose
Once starter is ready to go ahead and make your first loaf of bread at this point with your recipe of choice. Save any leftover from this batch in fridge until next time you want to make a recipe.

Recipe for Single Loaf
Sourdough Sandwich Bread- 1 loaf or dough for Toutons
Into a bowl combine and mix until completely blended:
• 320 grams unbleached all-purpose flour
• 6 grams (1/4 tsp) instant yeast (optional) (use if in hurry)
• 8 grams (1/2 tsp) salt (no iodine salt)
Set aside to completed next step
In a bowl blend together 12 grams coconut milk powder and either 12 grams regular brown sugar or 6 grams brown sugar substitute; once completely blended with no lumps add to dry ingredient bowl.
In large bowl mix the following wet ingredients together well:
• 165 grams water, warm
• 80 grams active sourdough starter
• 10 grams oil of choice
Add all the dry ingredients into the wet ingredient bowl and mix until no dry bits remain. Cover and rest for 15 minutes, knead for 5 minutes. Cover, let rise for 1 hour then knead down dough. Wait 60 minutes and move to loaf pan.
Dough may take 4-6 hours to rise above pan. When it does bake 350 for 35 minutes or until browned to your taste.
Dee makes the best bread ever. I can only.eat her bread which means that I plan on making her bread forever.

We gave some starter to a friend who is using it in a bread maker. They have a recipe for the bread maker and from what I have been told it works well with it.
