LA Bound: Bo Kho (Traditional Vietnamese Beef Stew)

- This is one of my favorite things to make especially for big groups & special occasions.
Vietnamese Beef Stew also known as -
Bo (beef) x Kho (stew/braise)
Beef Shank:
- Marinate 4-5 lbs. of beef shank cubes in 2 tablespoons of each powder/spice - Anise, garlic, ginger, clove, chili , onion & paprika for a minimum of an hour or maximum overnight.
- 1/2 Cup of Minced Lemongrass
- 2 Tablespoons of Fish Sauce
- 4 Tablespoons of Salt
Stew Pot Shenanigans:
- Heat up some cooking oil lining the bottom of the pot.
- Add you beef cubes in and sear inside the pot consistently turning until all sides are seared up (8-10 minutes).
- Next add you cup of smash fresh tomatoes to the party and saute with everyone.
- Add 3 liters of high quality water.
- Add you fresh ginger, fresh lemongrass, medium rock sugar and cover on low simmer for 1 hour and 15 minutes.
Coffee Break & Prepare Your Carrots
After 1 hour 15 minutes remove the lemongrass from the party and toss. Add in you carrots and cover for another 15-20 minutes and turn off the heat. Your beef stew is ready to serve!
Garnish with -
1. Green Onions
2. Yellow Onions
3. Thai Basil
Lime Sauce:
1 to 1 ratio of salt and pepper with fresh lime juice squeezed.
