I saw a Danchuk UA-cam video that said the offset cross shafts were for frames that had sagged over time and this was the only way to bring the front end geometry back to be within tolerance.

I am pretty sure the cross shafts were the same with the factory ps that was available?
Yes same. When you put on the new aftermarket power steering box, these offset ones are recommended
