I just did this a few days ago. I used an old family recipe that uses milk and eggs, and I tried to use a starter that my husband made. It had been in the refrigerator for quite a while. I ended up mixing in some yeast because it wasn't rising. I've now started my own whole wheat starter with your method!

Thank you for sharing your gf starter method. I am one of the people you mentioned who have a gluten intolerance but do tolerate sourdough. I usually buy sourdough bread instead of gluten free because I find that gf bread has a texture similar to cake, and therefore needs toasting. I have made gf bread previously and find it cooks best for 2 to 3 hours in a slow cooker, for a better texture. I've always had a gluten intolerance but found it's much worse after having covid.
Could you please share your slow cooker recipe?
@@rolliecrafts255 Sadly the starter died in hot weather. But for you, to use the slow cooker, line the slow cooker with baking paper. Shape bread to desired shape, must be free form and not in a pan. Must be a single loaf only. Cook for 2.5 hours on high.

Hallo Anja, I do enjoy your videos (they bring back a little bit of Germany). I recently learned when your do a "stiff starter" using only half the water your starter will grow more yeast. I still need to try that but thought to pass it on here.

When making a loaf of bread, just using the sourdough starter for the yeast, how do you keep the loaf from drying out as it rises?
You can cover it with beeswax wrap or plastic wrap
How long can you keep discard in the refrigerator?
I have kept it in there for about 6 months but then it gets pretty strong 😌
I like the dough when I turn it out to knead and its so warm and mooshy!!
Is there some sort of trick to get the starter to really activate(bubble&rise&fall...) Mine just sits there! It does smell beautiful though but I only got one rise and fall when I started it about a week ago! I do stir it daily and add fresh flour every couple of days! Am I actually over feeding them?(I have twins!😂🤪✌🏻) It also is a bit cool in my place! Maybe 65 ish? One more question: Should I just not worry as it smells(like I said) beautiful! Just not really bubbling & Rising! Okay, two questions: Do you have an actual book specifically all about sourdough, Detailing the Whole Sourdough Starter Thing? Hopefully I can get the tutorial/class you offer at some point but a book would be nice!😉 Thanks for all the advise, and don't feel obligated to reply to me on this one although you have been so gracious to answer my previous questions! So many people would love a book and as soon as I find the time, I will write one! I don't know that you can overfeed your starter but have you tried feeding it rye flour for more activity? Also, finding a warmer spot than 65˚F will help it a lot ~ anja

@@OurGabledHome yes like a cookie recipe. There’s no water but I tried to just subtract 1/2 cup of flour but the dough was too sticky. Does this conversion just work for recipes that the dough rises?
Is it mean 7gr of dry yeast = 100 gr of sourdough mam? I am from Indonesia and i use grams so i dont understand very well about cup measurement

My sourdough is so super active in the summer. I love baking with it however it is so hot and it just hits of the house so much and unfortunately I don’t use it as much.
I get it! However, you can make pancakes and waffles with it - and keep it in the refrigerator 😊 ~ Anja
In the summer I often stick to English muffins which you make in a pan on the stove, so at least you don't have to turn on the oven. I've never tried but maybe you can even make them on an outdoor grill?
I love to use my outside grill for summer baking. I use it a Dutch oven to bake my bread and a flat cast iron for pizza, naan, pita breads. My house stays cool this way and I get to be outside. 😊
