My mother made the most wonderful sour dough pancakes, perfect golden and rarely as blemish spot on them. She would butter them all as they came off the griddle and any leftovers went into the bread drawer. We would slip by in the afternoon and get one, nothing else needed they were great cold without anything else added!

I really love your “Low Maintenance” approach to sourdough! ALSO- the “relationship” that you refer to - I am working on Day 3 of my starter and things are ‘bubbling’ right along. I had read in another article that putting the starter in the oven with JUST THE LIGHT on would move things along. BOY and HOWDY did it! I had a thermometer in the oven with the starter-with the stater away from the light and closer to the door. Temp= 86 degrees! I only did this to get it started. AND-happy, happy yeasts! Coasting on the counter last night and this morning in my 68 degree kitchen-yeah, my husband likes a cool/cold house. Thanks for your wonderful, carefree demeanor that makes watching so pleasant. It’s just like I’m in the kitchen having a cup of coffee with you! I look forward to more of your videos.

Anja, I know you aren't keen on this video but really it is your best one on this topic. It covers all the details. I've started another sourdough batch for this winter. I was not good at keeping the one I made last fall using your method. I had some unreliable refrigeration problems. I have a nice start on the new one! I look forward to freezing a little and drying some as one of your new videos demonstrates so I don't start from scratch again. Tho I must say the day I mixed this new one using rye, einkhorn, my own well water, and home made kefir and caraway of course! Then I carried it all around my land with the cheesecloth cover and introduced it to all my trees, the garden, the creek, the lavender crop... it was fun and I shook the natural pollen of each as we went along. This older series shows the day by day and how to know when it's ready. This starter is bubbling at the surface but not rising much yet in the jar after just 4 days. Thank you for sharing your experience!
@user, I 100% agree w/this video as being the best. I think every question I had was answered in this particular video. I liked at the end when Anja said something to the fact that she wasn’t used to anyone watching her w/the daily progress. Then day 6, I believe, she was elated when she was rewarded w/bubbles! Such a sweet spirit! So happy I found her and I give the credit to Lisa w/Farmhouse on Boone, (another great You Tube channel).
I wish I had found your site sooner! Just made my first scratch sourdough starter the more "usual" way (following a recipe from a flour website), and while it finally has seemed to turn out, I went through SO MUCH flour!!! I will for sure use your method for maintaining my starter :) Thanks for sharing you and your family's wisdom on sourdough and other homestead-y things :)
Thank you! I will be tossing my starter I made last spring, because of Passover. I find it interesting it only takes 7 days… so it will be perfect and ready when the fast of unleavened bread is over.
I’m in Ireland and it’s 1:15am in lockdown. I’d been looking into making sour dough for a while now but it seemed complicated so I was putting it off. I’ve just made your started right now in the middle of the night because it looks so natural and easy. I had also put off making brown soda bread for years as so many methods seemed complicated and I was constantly messing it up. I learned to relax and trust myself with the soda bread after a lady I cared for showed me how to make it. I found I was able to make it easily after they and now people ask me for that recipe all the time and really enjoy it. I really enjoyed your video lesson. On day 3 of my first sourdough starter using just whole wheat flour and tap water, I had left out overnight to get rid of the clorine. I have watched a bizillion how-to's on sourdough starter. Yours is my favourite. I had stopped to get groceries, but the store I stopped at had neither rye flour nor caraway seeds. I will try those next time. I made my starter quite thick in hopes of getting a more sour bread (from your 17 tips video). It sttuck to the spoon the first two days . Today, it just started getting a slight sour smell and slid off the spoon. It had a very few bubbles yesterday. Today, it had about double the bubbles. I expect it will take awhile.in my cool kitchen. Looking forward to developing my relationship. Thank you so much for the encouragement!

Thank you so much for all your SUPER IDEAS. I now put a couple of Tablespoons FLOUR on top of my Genesis2 Sourdough Starter before I place it in the refrigerator....following feeding after using it to Bake. My Bread is still GREAT and mu sourdough is SUPER TOO. I bake every two weeks. ...sometimes more.
I started baking a variety of breads and buns several years ago as I became more & more disappointed with store breads as they lacked in taste, went to three evening classes led by the youngest profi baker in Austria. I'm very pleased with my first loaf baked with this starter that you taught me. I've not seen an easier more to the point process anywhere. And boy do I have a lot of starter for much more bread Thanks so much! Now on the How to Make Buttermilk school! And of course more bread! 😂🍞🥖
I am having fun experimenting, so I created a second starter using this method, my first one was done with just Einkorn flour and water. This method made a really strong starter! It was probably ready on day 6, but I added a little more flour and gave it an extra 2 days, then it was bubbling like crazy, despite of a cold spell. It has a lot more dairy smell than my other starter, who is more on the vinegar-y side, the first one also isn't quite a strong (but usable, it made good bread, albeit dense. I only use 100% whole grains). First loaf with the new starter and whole Einkorn came out great, quite fluffy for 100% whole grain!

Ohmygoodness, I I’m watching your other sourdough starter video so I followed the link to this. Every other recipe for this is soo precise, weigh flour and water add to every 24 hours, sing to- etc. this seems tooeasy/good to be true, but it’s right up my alley. Thanks so much!
I have to say THANK You!!! Thanks to your method I have now baked my second loaf of sourdough bread and it is delicious. Easy to make( I used yogurt) easy to maintain. Always wanted to do it naturally but all the measuring,discarding,weighing put me off. Not anymore❤❤❤
Nice work. To my dough, I frequently add yogurt, or replace the water with whey (from cheese that I've made). One might not be able to distinguish that it's there, (or exactly what it is) but when it's not added it is quite conspicuous by its absence. best of success for your future endeavors.
I know this is an older video but I've watched it a few times and will probably watch it a couple more times...so I finally went for it and started mine today!! I'm using Bob's Red Mill organic dark rye flour. I don't have a beeswax wrap yet but I'm my to do list.. I covered it with a cloth and used the band to keep it closed.. my kitchen is about 68deg... Hope it turns out. Thanks for such a great video!😊❤️

I'm excited about trying this starter, I've never had any luck before. I don't have any butter milk so decided to make some by adding 1tbsp of lemon juice to 1 cup of milk and leave it to sit for 20mins till it sets. Hope it works, will clock back in and let you know how my starter turned out. Thank you for this starter recipe.

Then I heard you say if we don't use sourdough we may not have any wild yeast in our air. Makes sense. I'm no quitter, I'll try to revive this one, but I also wanna make one your way. Wow! I'm a true novice. I started noticing tiny bubbles yesterday! I doubted myself and said they must be from me stirring it and incorporating air. But today, it's bubbling like a witch's cauldron! I can't believe it still. I'm almost frozen in my tracks. Is it really time to make my first sourdough bread using my own starter? I'm so excited!
This is my first time making a traditional sourdough starter I'm using Einkorn wheat and buttermilk, it started out okay and then about day ten it just kind of went flat for a few days so I fed it some sugar which is what I use in my quick set sourdough starter to activate the store-bought yeast and it worked. Thanks for your help.

Just starting out I made one bread and I’m working on my second sourdough because I was traveling I’ve got to take it out of the refrigerator and so anyhow I’m doing a new one are using your method and so far so good thank you
I tried other sourdough starter...unfortunately, never worked for me( I probably was impatient, and thought I did it wrong) I loved that you went through each day... being patient for the perfect smell, and look. So happy to find this method. I make my own kefir. So I am going to try that instead. I'll let you know how it works out. Can't wait.
THIS is the method that appeals to me. I've watched many videos/read blogs, but none have encouraged me to try that method, but this one does! Wish me luck! I hear sourdough is so much better for you. I plan on using fresh milled flour. Any recommendations on which wheatberry to use? I am not a rye fan, but maybe that's my child's mind. @@OurGabledHome Found a bit of white fuzz in one of my starters(on the side of jar) I was torn, should I chuck it? Or no? I got brave and gave the whole thing a good stir and put in some fresh flour, two days later it looks and smells fine!💪🏻 I think I saved it!🤪 I just figured the good bacteria will kill the evil bacteria(if that what the fuzz was!) It was pure white but it disturbed me so I just stirred in some fresh flour and hoped for the best! Next morning it was all the way to the top of the jar, and no sign of "whitey"!!! I want to keep it going so it gets stronger and more sour! Am I missing something?🤯😎
Well I started my starter just as you did 3 days ago. This morning it had risen to the top of the jar so I did what you do. First the smell test, then the wooden spoon tapping and stirring. It smell very sour but I will give it another day before trying to bake something. This starter is very thick almost like a very very sticky wet dough? Hoping it’s the start of a great starter 😃. Hello, thanks for your videos. My question is-what you do when you use that amount to make the bread? Do you leave a certain amount in the jar and just add flour and water again?how much? Do you still grow that new one for six days? I’m so confused, although baked lots of bread with fresh yeast. Thanks

Hi Renee, sourdough does not have to be complicated and have been using this method for decades. My method works every single time - just as I describe in the video. Hope this helps and happy sourdoughing 😊 ~ Anja
Renee...that is what makes this particular sourdough starter so fabulous is you don't have to weigh and discard and all those complicated steps...plus it's more "mellow" that the ones that require all the steps...but end up sooooo darn tangy that you can't enjoy the bread!!!

I'm a new subscriber and have watched one other of your videos so I decided to watch you create the sourdough. I'm enjoying watching so far but I'm also enjoying watching the lovely plant on the right hand side of your windowsill with the pink flower. May I ask what it is? And thank you for being so kind as to share your knowledge of sourdough starters and bread. I spent many years in Germany and enjoyed and loved the breads so very much. Brotchen is one of my favorites. And finally, America is beginning to make and enjoy really crusty breads instead of the "bagged air" available in the grocery stores. Again, thank you so much.

Dear Mam, I am so so glad to find your channel, especially this video showing how to make a starter without feeding and wasting. I made my starter with spelt flour and caraway seed and I place the jar in the owen cause my house is kind of cold during winter. Today is the 4th day and my starter rose more than double in size and it reached the top of the jar. I wonder if I can use it to make breads by now or should I wait till 7 days? It could very well be that you already have a good starter on day 4!!! You could do the float test (drop a bit of starter in a glass of water, it it floats, it's ready) or try baking with it! That is so awesome!!! Thank you so for sharing and for commenting 💛 ~ Anja
I just wanted to Thank you for this video. I tried to make a starter 2 times and failed. So I found this video and tried it and oh my it sure did work. I even had to go on a trip from Tx to La and brought it with me because it was not done yet. While in La it rose and almost overflowed my jar. I was so excited. It was quick. I saw nothing for several days then one day I saw a few bubbles, stirred it and left it alone till the next day. I opened it and it has rose to about 1/2 from the top. So I stirred it down and fed it. By 2pm it was almost over topping the jar so I started my first ever sourdough bread. I can't say it was a complete success but I won't say it was a failure either. It just did not rise very much. I think the recipe I followed was not a good one. But anyway my picky grand daughter who will NOT eat the crust of regular bread loved it and ate the crust. So now I am looking for a recipe you use for sourdough bread and will try that tomorrow. I have to get my starter out of the fridge this evening. Again, Thank you so much for sharing. God Bless

@@OurGabledHome I only made the one so far. Was with my 2 year old grand son who had a lil surgery so it was a bit too hard to do more. I did as you said and put a lot of flour in it and some on top and put it in the fridge. I wanted one with just the sourdough starter. The one I used the other day was a one day one. I did not have the time to let it go overnight. lol Thanks again.

As someone new to making bread I wanted to learn but so many videos were a lot of feedings and discards and seemed confusing, complicated and wasteful. I almost didn’t try until this video. I made my first loaf last night and eating tonight. So good! And storing it the way suggested because I don’t bake every day is also awesome. I know your video is older but how would you share starter with someone else ? Would you feed and then divide or divide it and feed each portion?

You are a great teacher and obviously a very nice person. I am starting my starter today and used Greek yogurt instead of buttermilk. After my starter is ready to go can I use bleached flour when making my bread? Also, will the chlorine in our local water cause problems? Thanks! George

First time watching your video, I will start following you and will do your fermentation yeast. It was very hard for me to find the caraway seeds 😢 I laugh 😂 so much when I googled it caraway seeds. Anja, I know you aren't keen on this video but really it is your best one on this topic. It covers all the details. I've started another sourdough batch for this winter. I was not good at keeping the one I made last fall using your method. I had some unreliable refrigeration problems. I have a nice start on the new one! I look forward to freezing a little and drying some as one of your new videos demonstrates so I don't start from scratch again. Tho I must say the day I mixed this new one using rye, einkhorn, my own well water, and home made kefir and caraway of course! Then I carried it all around my land with the cheesecloth cover and introduced it to all my trees, the garden, the creek, the lavender crop... it was fun and I shook the natural pollen of each as we went along. This older series shows the day by day and how to know when it's ready. This starter is bubbling at the surface but not rising much yet in the jar after just 4 days. Thank you for sharing your experience!

I wish I had found your site sooner! Just made my first scratch sourdough starter the more "usual" way (following a recipe from a flour website), and while it finally has seemed to turn out, I went through SO MUCH flour!!! I’m in Ireland and it’s 1:15am in lockdown. I’d been looking into making sour dough for a while now but it seemed complicated so I was putting it off. I’ve just made your started right now in the middle of the night because it looks so natural and easy.
I had also put off making brown soda bread for years as so many methods seemed complicated and I was constantly messing it up.
I learned to relax and trust myself with the soda bread after a lady I cared for showed me how to make it. I found I was able to make it easily after they and now people ask me for that recipe all the time and really enjoy it.

On day 3 of my first sourdough starter using just whole wheat flour and tap water, I had left out overnight to get rid of the clorine. I have watched a bizillion how-to's on sourdough starter. Yours is my favourite. I had stopped to get groceries, but the store I stopped at had neither rye flour nor caraway seeds. I will try those next time.
I made my starter quite thick in hopes of getting a more sour bread (from your 17 tips video). It sttuck to the spoon the first two days . Today, it just started getting a slight sour smell and slid off the spoon. It had a very few bubbles yesterday. Today, it had about double the bubbles. I expect it will take awhile.in my cool kitchen. Looking forward to developing my relationship. Thank you so much for the encouragement!

I started baking a variety of breads and buns several years ago as I became more & more disappointed with store breads as they lacked in taste, went to three evening classes led by the youngest profi baker in Austria. I am having fun experimenting, so I created a second starter using this method, my first one was done with just Einkorn flour and water. This method made a really strong starter! It was probably ready on day 6, but I added a little more flour and gave it an extra 2 days, then it was bubbling like crazy, despite of a cold spell. It has a lot more dairy smell than my other starter, who is more on the vinegar-y side, the first one also isn't quite a strong (but usable, it made good bread, albeit dense. I only use 100% whole grains). First loaf with the new starter and whole Einkorn came out great, quite fluffy for 100% whole grain!
Nice!! What you're smelling is the lactic acid (milk) vs the acetic acid bacteria (more vinegary) but in any case, it sounds like you got it 👍 ~ Anja

I have to say THANK You!!! Thanks to your method I have now baked my second loaf of sourdough bread and it is delicious. Easy to make( I used yogurt) easy to maintain. Always wanted to do it naturally but all the measuring,discarding,weighing put me off. Not anymore❤❤❤

Nice work. To my dough, I frequently add yogurt, or replace the water with whey (from cheese that I've made). One might not be able to distinguish that it's there, (or exactly what it is) but when it's not added it is quite conspicuous by its absence. best of success for your future endeavors.

I know this is an older video but I've watched it a few times and will probably watch it a couple more times...so I finally went for it and started mine today!! I'm using Bob's Red Mill organic dark rye flour. I don't have a beeswax wrap yet but I'm my to do list.. I covered it with a cloth and used the band to keep it closed.. my kitchen is about 68deg... Hope it turns out. Thanks for such a great video!😊❤️

I'm excited about trying this starter, I've never had any luck before. I don't have any butter milk so decided to make some by adding 1tbsp of lemon juice to 1 cup of milk and leave it to sit for 20mins till it sets. Hope it works, will clock back in and let you know how my starter turned out. Thank you for this starter recipe.

This is my first time making a traditional sourdough starter I'm using Einkorn wheat and buttermilk, it started out okay and then about day ten it just kind of went flat for a few days so I fed it some sugar which is what I use in my quick set sourdough starter to activate the store-bought yeast and it worked. THIS is the method that appeals to me. I've watched many videos/read blogs, but none have encouraged me to try that method, but this one does! Wish me luck! I hear sourdough is so much better for you. I plan on using fresh milled flour. Any recommendations on which wheatberry to use? I am not a rye fan, but maybe that's my child's mind. @@OurGabledHome Found a bit of white fuzz in one of my starters(on the side of jar) I was torn, should I chuck it? Or no? I got brave and gave the whole thing a good stir and put in some fresh flour, two days later it looks and smells fine!💪🏻 I think I saved it!🤪 I just figured the good bacteria will kill the evil bacteria(if that what the fuzz was!) It was pure white but it disturbed me so I just stirred in some fresh flour and hoped for the best! Next morning it was all the way to the top of the jar, and no sign of "whitey"!!! I want to keep it going so it gets stronger and more sour! Am I missing something?🤯😎
Well I started my starter just as you did 3 days ago. This morning it had risen to the top of the jar so I did what you do. First the smell test, then the wooden spoon tapping and stirring. It smell very sour but I will give it another day before trying to bake something. This starter is very thick almost like a very very sticky wet dough? Hoping it’s the start of a great starter 😃. Renee...that is what makes this particular sourdough starter so fabulous is you don't have to weigh and discard and all those complicated steps...plus it's more "mellow" that the ones that require all the steps...but end up sooooo darn tangy that you can't enjoy the bread!!!

I'm enjoying watching so far but I'm also enjoying watching the lovely plant on the right hand side of your windowsill with the pink flower. May I ask what it is? And thank you for being so kind as to share your knowledge of sourdough starters and bread. I spent many years in Germany and enjoyed and loved the breads so very much. Dear Mam, I am so so glad to find your channel, especially this video showing how to make a starter without feeding and wasting. I made my starter with spelt flour and caraway seed and I place the jar in the owen cause my house is kind of cold during winter. Today is the 4th day and my starter rose more than double in size and it reached the top of the jar. I wonder if I can use it to make breads by now or should I wait till 7 days?

It could very well be that you already have a good starter on day 4!!! You could do the float test (drop a bit of starter in a glass of water, it it floats, it's ready) or try baking with it! That is so awesome!!! Thank you so for sharing and for commenting 💛 ~ Anja
I just wanted to Thank you for this video. I tried to make a starter 2 times and failed. So I found this video and tried it and oh my it sure did work. I even had to go on a trip from Tx to La and brought it with me because it was not done yet. While in La it rose and almost overflowed my jar. I was so excited. It was quick. I saw nothing for several days then one day I saw a few bubbles, stirred it and left it alone till the next day. I opened it and it has rose to about 1/2 from the top. So I stirred it down and fed it. By 2pm it was almost over topping the jar so I started my first ever sourdough bread. I can't say it was a complete success but I won't say it was a failure either. It just did not rise very much. I think the recipe I followed was not a good one. But anyway my picky grand daughter who will NOT eat the crust of regular bread loved it and ate the crust. So now I am looking for a recipe you use for sourdough bread and will try that tomorrow. I have to get my starter out of the fridge this evening. Again, Thank you so much for sharing. God Bless

@@OurGabledHome I only made the one so far. Was with my 2 year old grand son who had a lil surgery so it was a bit too hard to do more. I did as you said and put a lot of flour in it and some on top and put it in the fridge. I wanted one with just the sourdough starter. The one I used the other day was a one day one. I did not have the time to let it go overnight. lol Thanks again.

As someone new to making bread I wanted to learn but so many videos were a lot of feedings and discards and seemed confusing, complicated and wasteful. I almost didn’t try until this video. I made my first loaf last night and eating tonight. So good! And storing it the way suggested because I don’t bake every day is also awesome. I know your video is older but how would you share starter with someone else ? Would you feed and then divide or divide it and feed each portion?

You are a great teacher and obviously a very nice person. I am starting my starter today and used Greek yogurt instead of buttermilk. After my starter is ready to go can I use bleached flour when making my bread? Also, will the chlorine in our local water cause problems? Thanks! George
