      The filling looks great, but honestly I'm crying in Mexican with that sauce. Actual chiles are very cheap in Latino supermarkets, and since you are not using much, it would be even cheaper for you. Please stop, my ancestors are sad. And white people are always apologizing with Italians when you break pasta or mispronounce something, but y'all never do when you do this to our recipes :'c

    I’m soooo glad Daiya updated their cheese formula, the cutting board shreds are a million times better than the old formula of their cheese shreds!

      I actually prefer the original formula. Perhaps that's because they're what I'm used to? But I think it's great that to have so many options!

      They ruined them from the original cutting board collection. The first cutting board collection they came out with was perfect, then they had to mess with them for some reason, sigh.

      @@amberhale123523454 When I say they ruined it, I mostly mean that they made it even more oily. Taste-wise I think they're still okay, it's just you gotta be careful what you're using it for. Egg rolls? Don't do it, lol. BUT, I now recommend Violife to people assuming it's available. But if the Daiya cutting board is your only option, it's still an ok'er option than the rest.

      Having an hour to spare for cooking one single meal. Having the money to buy all those condiments and a kitchen that‘s big enough to store so many different things. That‘s a huge privilege. That‘s what I‘m trying to say.
      I used to be a food blogger myself and spending 3 hours in the kitchen each day and cooking meals from a million different ingredients was normal and realistic for me. But now that I don‘t do this for a living anymore I realized how unrealistic it is to cook meals that take more than 20-30 mins on weekdays with a full-time job and a family.

    The new shreds are so much better lol they used to literally smell like feet and not melt and now they’re bomb 👌🏼 also a typical day of eating for me starts with coffee and some days I’ll have like homemade muffins or banana bread and some days I’ll have oatmeal or a smoothie instead. Lunch varies widely, I haven’t figured out exactly what I like to eat for lunch lol but sandwiches are good and soup, sometimes even smoothie bowls and stuff that’s not so heavy. Dinner can literally be anything but I personally love Thai curries, pizza, pasta, stir fry, stuff like that!

    I am so happy I found your Vegan bacon last week! My 11 yr old gave up meat in March and I'm a big meat eater! We love that your Canadian and you make vegan foods that link with making traditional meat foods. Daughter was missing bacon and had not loved faux meats. My next task is find jackfruit for enchiladas!

      You're a great parent to help your kid with this! When I was 16 I suddenly informed my mom I was vegetarian. I didn't think about how this complicated cooking for me. She agreed as long as I ate eggs and dairy too. Now I'm cooking for an entire family with different diets and preferences and I do understand that it wasn't easy for her. Also, what a brave little daughter you have!

    Do you think you can make a DIY canned young Jackfruit for people in the tropics who have Jackfruit trees. fresh jackfruit doesn't have the same texture with canned. I want to be able to make my own canned Jackfruit. I want to harvest lots of them before they get ripe.

    My gosh, you've just reminded me of my favourite summer drink- a strawberry and yoghurt smoothie. It's a "milkshake" I used to love as a child. And I will probably have to make some today ;P

    I can not wait to try making these enchiladas as soon as I can find the cutting board shreds! I hope Diaya realizes what a good deal this video was for them because I feel like there must be so many vegans like myself who swore they would NEVER try a Diaya shred again but I trust you 100% so I'm going to buy them the second I see them! Also, I love the plant pot from dollaramma in the foreground! I have the same one!

      Same! I will give the new shreds a shot. Their mozzerella cheese sticks are a lot better than their early shreds. I cut the sticks up on salad because they’re similar to feta. Looks like they’re changing up their shreds, yay!

      abc def but... they’re actually so much better lol it’s not a branding tactic. They used to taste and smell like feet and now they taste like cheese lol I’ve been vegan for 5 years and Daiya just plain wasn’t good before and now it is. It’s not an illusion lmao

      @@lizcarr6329 Dude, I've never had their cheese, I don't live in the US, they don't sell it here, but I wouldn't purchase it online, just because I personally hate it when out of nothing every YTer is the hugest fan of a brand they've never mentioned before.
      Don't get me wrong, it's not a problem I have with this particular channel, but all in all, since every YTer I follow acts the same way, the brand just loses a lot of points for me...
      The product can still be good.

      abc def I agree with you unless the product is a new release. If it’s a great product it will spread quickly word of mouth. I’ve never seen this on the shelf before, it looks brand new. And could tell just from the video it looks and melts differently than the old daiya, so I can’t wait to try it and suspect others are naturally doing the same.

    Hemp seeds is one of my favorite proteins! Love that it contains all of our essential amino acids. I've been making hemp milk nonstop for the past few weeks 🌱

    Are corn tortillas not very common in Canada? I noticed you said flour tortillas are easier for you and for viewers to find, but where I live in the US, corn tortillas are just as readily available as flour. Just curious!

(I am trying, to be vegan) - If it weren't for content like yours, I would not be able to do recipes ware people don't feel like they are missing something.

    I love the vegan enchilada recipe idea. I've made something similar before but will have to try this recipe. I appreciate you making this realistic. I have been vegetarian for over 22 years and converted to fully plant-based over the past year and a half. No looking back! You've also inspired me to make more smoothies.

    You need to try Soya Cheese, you can normally find it at Superstore or No Frills and it’s EXACTLY like real cheese 🧀

    OMG the Enchilada recipe is a "I've died and gone to heaven recipe" I am on a weight loss quest so I am mostly eating potatoes, greens and non starchy veggies. But this will be a treat someday in the far away future.

    I just made this recipe tonight and IM SHOOK! I think it might be my fave Edgy Veg recipe. The spices created one of the best sauces I’ve ever tasted and each bite of the cheesy mixture within the tortilla blew my mind! I actually only used 1 pack of daiya’s new cheddar shredded cheese and was perfect! My non-vegan family was shocked how good it was when they knew I was making a vegan meal tonight😂 10/10 recommend this recipe

    Vegan for a few years now - I eat literally all day long, but I eat tons of veggies, homemade “chipotle” style bowls, and a good green protein shake in the morning. Skinny legend.

    I do not like the upgraded version of the cutting board shreds. It's just tooooo oily, and also crappy for doing fried anything that involves cheese.

    I've been following your channel for 5 years (started when you released the Chick Fil A copycat) and I haven't been vegan but have always aspired to be. Sooooo half a decade later, I'm ready to pull the trigger (I can't wait to make your lobster roll, btw!) But what advice would you give for someone who has a carnivore partner? How do you do it? Do you have to cook two meals every time? It's easy when we go out, but at home that can get pricy (and tiring). I want to be a vegan for animal ethics, however, as a functional health practitioner, I respect that some people (like my partner) wouldn't thrive on a vegan diet (also I don't want to force it), so I "don't mind" cooking animal protein for him (I know, I know, its hypocritical but I love him and respect his diet choices), but I have to go vegan. I'd love your opinion.

      I find that you can often share lots of your meals, especially if your partner is willing to occasionally eat vegan meals. If not, making the sides all vegan (vegan veggie dishes and rice or pasta for example). Then you can have different protein options to go with the meal

    I was skeptical to try the cheese. I was never really a fan of the texture of daiya in the past but HOLY CRAP! It is so good. The pepper jack is my favorite

    I literally had Daiya paperback cheese for the first time this week, and it was so gross that I had to go to the kitchen and remove it from the dish. I really hope I bought the old version and this new version really is as good as you're claiming. Maybe it only tastes good melted/into a sauce?
    If anyone has had both, and can chime in if the new version really is better or not, I would love to hear it.

    I’m confused. Diaya came out with cutting board shreds a while ago maybe 6 months to a year ago?!? Is this a different recipe than that?

    Beat it still has potato starch in it. It’s hard to find store brands of non dairy cheese with out potato starch 😢 sucks to be allergic to potatoes now.

      Some of Miyoko's cheeses don't have potato starch in them! The shreds unfortunately do, but I think you should be fine with the Mozz ball and the hard cheeses. Treeline cheeses are all potato-free as well. I can't think of any vegan shreds that are potato-free though, unfortunately.
