I'm Thai and I've never seen Thai curry likes this before, it's really unique. Some Thai people who have seen this curry may say 'what the hell is this'.
I think the recipe is adapted to suit more of core audience: Britain, Wales, Scotland. Many items required for traditional Thai dishes simply aren't available, esp to those living in rural areas that have a single food store, where shopkeepers cannot order 5 lbs of red Thai chilies, for example, because one shopper needs 2 chilies for a dish.

In traditional way to do real curry, it takes a heck of a long time just for the paste. They use mortar to bash into fine paste (not even a grain of chilli's seed should be seen) so that they can extract the essence of the herb more, using food processor is just cut them in small pieces. And they don't use tomato puree in thailand. So the real ingredients to make the Red curry paste are: 3 Red dried chilli (long one) 5 bird eye chilli 1 tea spoon of white pepper 1 tbsp of dice galangal 1/2 tbsp of fine chop lemon grass 1/2 tbsp of fine chop kaffir lime zest (use lime as substitute) 1/2 tbsp of fine chop cilantro's root 1 shallot 3 cloves of garlic 1 tsp of salt 1 tsp of Krapi (shrimp paste) dried one should do it as well. Bash them up!!! I promise when you cook the paste with you'll get the best hot curry ever, plus you get yours bicep great workout!!! AND PLEASE DON'T use corriander to finish cooking, instead use basil for the best!!! (sorry for bad grammar)

Okay guys. I know sometimes we have to adapt the recipe for the right taste for you. Less spicy, less salty, can’t find some ingredients. Yes, it’s hard to find all the right ingredients base on where you are. But please , DON’T call this “Thai red curry” because it’s not. You can say that this recipe INSPIRED from thai red curry. The recipe is not right. The way you cook, the steps is just…sorry but weird. I know this video was like 5 years ago but still kinda upset me.

I just think that this curry paste is sooooo far removed from the actual one. Now, I agree that everybody should be able to tweak any recipes in their own ways but isn't it important that the spirit and vibe of the dish still be retained in order to call it that name? Now to the main part: the ingredients comparison, I'll just list them and you guys can be the judges. Jamie's paste: lemongrass, kaffir lime leaves, fresh chili, coriander leaves and stems, roasted peeled pepper, garlic, tomato puree, ginger, soy sauce, olive oil, fish sauce, sesame oil Thai red curry paste: lemongrass, kaffir lime zest, a lot of dried chili, coriander roots, galangal, white peppercorn, shallots, garlic, cumin, fish sauce (and optional nutmeg), and shrimp paste
it's beyond clear, Jamie has never stepped into Thailand. if he did went to Thailand, Jamie hasn't learned any Thailand's culinary cuisines. not even a Thailand cookbook would help Jamie.
It feels like in any Asian quinine this man makes, he just walks into an oriental grocery store and runs his arm down the shelves and what falls in the cart is what he cooks with. No thought, no recipe testing, and no research goes into anything he has made thus far. Or at least that is truely how it feels. This time he managed to get 95% of the ingredients and techniques wrong. This is just as bad as when he used soba noodles to make ramen. To of which the chashu he massacred in that dish should have been considered a hate crime. He just needs to stop.
I have never stepped a single foot in Asia, i use olive oil for curries occasionally (for the first fry, frankly for me it does not change anything of the taste) and i define curry extremely liberal (base is always the same but then you can throw in there whatever the hell you want, even snap peas if you like). But even then, i would never consider commiting a crime to humanity like this thing. This is a "curry" for people who don't actually like eating curries.
Jamie has worked with Thai chef Poo (yes that's her actual name no judge) to make Thai massaman curry clearly showing Jamie how to make traditionally authentic Thai cuisine looks very good but this is Jamie Olive-Oil he's going to put his own spin on it and still hasn't learn anything about Asian cooking not even technique and the right amount of ingredients and he still sucks at cooking rice and using metal utensils on nonstick cookware.

Olive oil isn't so wrong-we don't use it just because it's a bit expensive and not as widely available as other cheaper options. The peas and lime juice, however, that's crossing the line. Also the paste is something else entirely.

Been to Thailand and done lots of Thai cooking myself. Never seen red peppers, olive oil or soya sauce in any Thai curry. Why dose he say ‘this is my secret’ when he takes out the lime leaves? That’s one of the most used ingredients in Thai cooking 🤔
Jaime has a habit of offending other people. And he really wants to mess with the Asians lol... With chilli jam in fried rice and mango chutney in butter chicken.... the list goes on.
I also have been there and tasted the food there and yet I can say this recipe tastes great (I did it myself) and it is easy to cook. Sometimes people get focused on small details when the important thing is have fun cooking and getting dishes that taste good.

But for someone who has never been to Thailand should at least have the authentic recipe and know how things actually taste. I love coriander but in Thailand we use coriander in a clear soup but for curry we normally put basil, it goes well with curry :) ( Red Curry or Green Curry) give it a try and let me know :) oh and one more little tip put 1/2 teaspoon shrimp paste in curry paste it will make a difference

Ok, today I’m about to make a famous British meal. Fish & Chips. -Firstly add a Thai Local fish on to the baby powder -Deep fried with Olive Oil -Now because we don’t have Fries because British ban it because it’s called French Fries. We decided to Deep Fried Green Pea instead. -Mayonnaise? Nah, Chilly Jam is definitely the most Bri-ish authentic things. -Then for the final touch we will add, Tofu with Raw Coffee Beans for dessert. -A final touch is a Cigarette. Because it isn’t Bri-ish without them. There you have it a “Very Healthy” Fish & Chips
After watching some of you videos cooking Thai food, dear Jammie, I do encourage you to study the authentic recipes. And please, coriander and ginger never appear in any of Thai curries, instead we use galangal and Thai basil

It feels like in any Asian quinine this man makes, he just walks into an oriental grocery store and runs his arm down the shelves and what falls in the cart is what he cooks with. No thought, no recipe testing, and no research goes into anything he has made thus far. Or at least that is truely how it feels.
This time he managed to get 95% of the ingredients and techniques wrong. This is just as bad as when he used soba noodles to make ramen. To of which the chashu he massacred in that dish should have been considered a hate crime. He just needs to stop.
I have never stepped a single foot in Asia, i use olive oil for curries occasionally (for the first fry, frankly for me it does not change anything of the taste) and i define curry extremely liberal (base is always the same but then you can throw in there whatever the hell you want, even snap peas if you like). But even then, i would never consider commiting a crime to humanity like this thing. This is a "curry" for people who don't actually like eating curries.
Jamie has worked with Thai chef Poo (yes that's her actual name no judge) to make Thai massaman curry clearly showing Jamie how to make traditionally authentic Thai cuisine looks very good but this is Jamie Olive-Oil he's going to put his own spin on it and still hasn't learn anything about Asian cooking not even technique and the right amount of ingredients and he still sucks at cooking rice and using metal utensils on nonstick cookware.

This is in the top results for Thai red curry, but pretty sure this is *not* the way thai red curry is made.... definitely no soy sauce, roasted red peppers or olive oil...
Olive oil isn't so wrong-we don't use it just because it's a bit expensive and not as widely available as other cheaper options. The peas and lime juice, however, that's crossing the line. Also the paste is something else entirely.
The O-Zone Airport Inn the olive oil is completely wrong..it throws off the balance of flavors..you want to use a neutral oil...and don’t get me started me with the sesame oil 🤦🏾♂️
@@miketurns202 I'd be more worried about how little he cooked the curry after adding in the coconut milk. It takes about 20 mins for the coconut milk to start getting infused with the flavour of the paste. 3 minutes seems impossible.

Been to Thailand and done lots of Thai cooking myself. Never seen red peppers, olive oil or soya sauce in any Thai curry. Why dose he say ‘this is my secret’ when he takes out the lime leaves? That’s one of the most used ingredients in Thai cooking 🤔

I also have been there and tasted the food there and yet I can say this recipe tastes great (I did it myself) and it is easy to cook. Sometimes people get focused on small details when the important thing is have fun cooking and getting dishes that taste good.

I love coriander but in Thailand we use coriander in a clear soup but for curry we normally put basil, it goes well with curry :) ( Red Curry or Green Curry) give it a try and let me know :) oh and one more little tip put 1/2 teaspoon shrimp paste in curry paste it will make a difference

Ok, today I’m about to make a famous British meal. Fish & Chips.
-Firstly add a Thai Local fish on to the baby powder
-Deep fried with Olive Oil
-Now because we don’t have Fries because British ban it because it’s called French Fries. We decided to Deep Fried Green Pea instead.
-Mayonnaise? Nah, Chilly Jam is definitely the most Bri-ish authentic things.
-Then for the final touch we will add, Tofu with Raw Coffee Beans for dessert.
-A final touch is a Cigarette. Because it isn’t Bri-ish without them.

I'm a Thai cuisine chef...and I'm speechless about this come on Jamie this is 100% not red curry ...the only 3 thing u uses right is lemongrass fish sauce and Kaffir lime leaf that's all but the whole thing is wrong...let me show you red curry in Thai is like
Thai red curry paste (if can find)
Lemongrass
Galangal
Red bird eye chili
Big chili red
Shallot
Lime leaf
Corriader root
Shrimp paste
Thai eggplant
Coconut milk
Fish sauce
Sugar if have palm sugar is the best
Thai sweet basil if not hot basil will do
Lime juice
Steps
Blend lemongrass,galangal,lime leaf, shallot chilis shrimp paste and corriander root put some oil to make it into a paste
Saute the paste with vegetable oil
Add coconut milk until become slightly water and some water or chicken stock
Add your protein and Thai eggplant let it simmer until the Thai eggplant soft and protein is cook season with fish sauce and sugar and lime juice and add basil cook for few second and serve
I made a Maine lobster roll today but I replaced the lobster with a hot dog, mustard instead of mayonnaise, and cake instead of a bread roll!

I am 5 years late.. but no.. its actualu up to you.. In asia we do mash or cut finely some ingredients like lemon grass so it will blend or pound easier.. and it wont give a fiborus texture..
