I think our two biggest chances to make a splash in the SEC are with LSU and Mizzou. Mizzou for the reasons you stated. LSU simply because their defense doesn't seem like it will be too much better than last year if at all. Ole Miss will (unfortunately) be elite again and I think we lose that one. Kentucky will almost certainly be a close game. TAMU, who knows. I assume they will be good too Road to 8 wins this season is weirdly doable if everything goes right. Start 4-0. Obviously tough, but not impossible. Beat Vandy and Mizzou, Wofford, rivalry shenanigans at Clemson or Clemson just isn't as good as people think they will be.
There's no way the South Carolina game can be a trap game for Missouri. By the time Mizzou lines up in the other Columbia, we already will have our playoff situation defined. Either we control our own fate by winning the final three games, or we're already out, in which case, we'll be taking out our wrath on a couple of teams we own, SC and Arkansas, or we'll be giving it everything we've got to make the playoffs.
Carolina should finally take care of business with Mizzou this year. No reason we should've lost these last several games against them. No disrespect to them, but it's time to restore order.

Every single road game is a potential loss whether youre #1 or #124. This conference aint for the weak. 10 wins in the Big 12 isnt the same as 9 wins in the SEC.
