    Ingredients
    6 tomatoes medium size
    1/2 inch ginger
    1 green chili
    2 tablespoons oil
    1/2 teaspoon cumin seeds (jeera)
    1/8 teaspoon asafetida (hing)
    1/4 teaspoon turmeric (haldi)
    1/4 teaspoon red pepper optional
    1 tablespoon coriander powder (dhania)
    1 teaspoon salt adjust to taste
    1 teaspoon sugar adjust to taste
    1 tablespoon corn starch
    1/2 teaspoon garam masala, spice mix available in Indian grocery store
    Approx. 4 cups of mix vegetables-- about 2 cups cauliflower cut into florets, 1 cup green peas, 1carrot diced in about 1/2 inch pieces (gajar), ½ cup sliced mushrooms, 1 zucchini small cut into bite size pieces with skin
    Approx. 2 tablespoons chopped cilantro (hara dhania)

    Manjula aunty's recipes are all very reliable and simple and easy which is why hers is my go to website for cooking. I cooked this today and it looks and tastes great. I would only change one thing and that is slice and steam the carrots ahead of time as they take forever to cook. This means the cauliflower will end up being overcooked.

    Making this today with potato, cauliflower, peas, peppers, carrots, onion, garlic, fresh chillies and sultanas. For spices I used:
    cumin seed, fennel seed, white mustard seed, brown mustard seed. Spice powder mix I used: Turmeric, coriander, asafatida, garam masala.
    I pretty much adhered to the way Manjula cooked her dish and honestly it was delicious!! We are all vegetarian in my house and my sons mates come in by the dozen on curry night...

    I'm thai but I like to eat indian food especially vetgetable curry...normally I must buy from indian restaurant only but now I can make it by myself with watching this your clip...appreciated madam

    This was tasty! I added a little coconut milk bc it was a bit too acidic for me. My husband land I really liked it. I'm excited about trying out new recipes on your channel!

    Made it with eggplant, cauliflower, pumpkin and peas. Added an onion to the puree. Very yummy! Thank u so much!

    Garam Masala is used in very small quantity, for adding touch of flavor and nice aroma.

    On May 24, 2022, my husband and I went to an Indian Restaurant for their lunch buffet. One of the dishes was a vegetable dish. As I was eating it, I was trying to identify the vegetables in it. Now I see that you posted a recipe for this dish on May 22, 2012, exactly 10 years and 2 days before! Now, with the help of your recipe, I will make this dish with confidence.

    Just cooked this, used ghee instead of oil because i thought it might be nice and different veg because I didn't have cauliflower / carrot. Absolutely delicious thanks so much for posting.

    Manjulaji, I love your chanel & for sharing your recipes with us. I tried your gobi paratha for the first time yesterday but it was not soft. How soft or hard should the dough be/ And wat should be the thickness of the paratha? I like the thick ones that is typically made in delhi/ north India. Thanks.

    Just have a question, why no onions? I usually see veg curries with onion (some are even have quite a lot). Will sauteing onions with the cumin seeds before the tomato puree be ok?
