Oops, meant bbq sauce!
Ok. First off... Good pasta dough (IMO) has a mix of flour, semolina, and egg (+ salt & touch of EVOO). I use a higher egg yolk ratio for color and extra flavor.
When mixing it all, the crater doesn't need to go all the way down to the table. Not wrong, but seemed odd.
When rolling it out, a little bit more flour on top of the flatted dough, this prevents the sticking. Then roll it out on the thickest setting first (very important). Fold it and roll it again the other way until it starts to be smooth, usually 2-3 rolls should do the trick. Then go 1 step down and thin out the dough. Repeat until you have your desired thickness.
Lastly, WHY BBQ sauce?! Italians everywhere...🤌🙄

Yeah BBQ sauce cos that's how my grandma made it since young and its a familiar taste for us. Not trying to make it the authentic Italian way but yeah you're right, the Italians will curse 😂😊
