  • Pickled daikons and carrots are an easy-to-make, classic condiment or side dish that's eaten across many Asian countries. The result is a sweet, tangy, crispy, and vibrant pickle. It's excellent with grilled or fried meats, adding an acidic crunch to your sandwich, or as a tasty side dish to your rice and other dishes.

    INGREDIENTS
    Shredded Daikon & Carrot = equal amounts (roughly 10 cup total)
    Salt - 1/2 tbsp (remove moisture)
    Sugar - 1 tbsp (remove moisture)
    Red Chili - as much as you like (halved)
    Pickling Liquid
    Sugar - 1 cup
    Hot Water - 2 cups
    Vinegar - 1.5 cups

    Hi all, it's not necessary to let the pickling liquid cooI down before adding it to the Daikon and Carrots. Add it right in. This pickle does produce a pungent smell, which is classic and normal. Enjoy this yummy and easy pickle. Take care everyone! 😋😁

    This looks so delicious !!
    When l make this; after brining and rinsing, l use pre-rinsed cheesecloth and place the veggies inside and squeeze out the moisture of my veggies, let them rest in the colander for 10 mins, fill my jars and pickle.
    Sometimes l cut them into cubes, and will put a bit of fresh red chili in them..if l'm out of fresh chili, l use a tiny bit of red chili flakes.......yummmmm🥰

    I openly admit I am barely novice level at making food, but enjoy trying. I do not have old kim chi jars. (All the new ones seem to be plastic.) I believe Mason/Ball jars will work nicely, and I remember from my childhood that these were the jars my grandmothers and mom would use for pickling. Naturally, I do not have any but will look for some to purchase.
    I mention this because it appears the jar is an important element in this. Yes, I believe Mason/Bell jars are indeed "heat-resistant" glass.

    Just made a batch this morning (without the chili) & canned it for the pantry so I'll have it on hand for when I need it for bahn mi. But if it turns out well, I'll probably start using it with rice or as a condiment with other meals. Thanks for the video.

    Simple recipe! Personally I prefer boiling the brine and letting it cool to help dissolve the salts and sugars so they'll pickle into the vegetables better, but it's understandable if people don't want to boil out the good bacteria, like in apple cider vinegar.

    omg, You read my mind- I was getting tired of the store bought kind/ I havent given up meat all together but I m trying to incorporate more veg. and tofu into my cooking, and I m doing it more since I started watching you.
    Ps, Great music! And, would u do a vid. how to make kimchi? No rush, but I would love to try making it and fermenting it myself instead of buying at store : ) Enjoy your weekend!

      Hi Anna, thank you for watching! I'm also trying to incorporate more veggies and greens into my diet. I have to eat up a lot of the herbs I'm growing soon. Colder weather is on its way, which will claim a lot of plants in the garden.

    I like it a lot, especially eating it with Por Pia! For me, it's going really well together 🤤

    If you process these and seal them in the jar, can you keep these on the shelf for a long time like you would with other types of pickles. It would be nice to do a bunch at once and be able to grab them whenever.

    sometimes i add cucumber. other times i mix the julienne and the ring cut of the daikon and carrots.

      I'm not sure what a good replacement for sugar would be. Possibly honey? The pickle is supposed to be sweet.
