  • Sweet and Me Chef Bertrand Jang shows us his recipe for Panikeke Waicala which is a Fijian take on pancakes and usually eaten on Sundays.
    It's a very easy recipe which only needs 4 main ingredients - Flour, Water, Sugar & Salt.

    I love mixing mashed bananas into the mix and then frying it. Honestly, you don't really need to add butter and/jam. It's quite delicious on its own.

      How many bananas do you usually put in? And are they still pretty yellow or pretty overripe? I want to try to make these myself, I remember always having these when I was a kid, but can't remember how to make them

      Its actually vanikeke in fijian but its been turned into p with modern fijian to panikeke

    Isaaa this video brought lots of childhood memories. My mom use to add mashed over riped bananas that are sitting pretty in the kitchen untouched 😂We love having Panikeke Waicala for tea especially after a good rainbath with friends.

      Yes you can.

      I wouldn't use olive oil because it tends to burn, try canola, vegetable or peanut oil because they have higher cook temperatures...that way your keke vai won't taste like burnt oil :)
