Im in now way an audio or electronics expert but if you want stereo you either need to buy stereo pots or double up the amount of pots. like for this you would need the double amount of components and wire a separate positive and ground coming from the headphone cables to each channel. and no one says you need to be a nazi about the values of the components. you could go completely crazy and have filtering through the entire audio spectrum i guess.
