Fluffy Japanese Pancakes (Jiggly Souffle Pancakes)

  • This is the ultimate souffle pancakes recipe as close as possible to the top Japanese pancake restaurants in Tokyo.
    ingredients:
    - 76g sugar
    - 36g water
    - squeeze of lemon juice
    - 2 yolks
    - 75g flour
    - 2 tsp vanilla extract
    - 2 tsp baking powder (4.2g)
    - 4 tbsp full fat milk
    - 6 egg whites
    25 min cooking at 80ºC on induction cooker
    flip and another 25 min cooking.
    equipment:
    - ring mold, I could not find the exact same ring mold online, the one in the video is 10x6cm, this one is 10x4cm, so its 3 cm shorter, but it still has the same diameter so it should work: geni.us/ringmold

    I have to say the techniques throughout this recipe were 100% foolproof. I followed this but halved the ingredients as my pancake rings were smaller in size and they turned out to be the lightest and most airy pancakes I have ever tried. Without a doubt chef devaux, your recipe is No 1. It takes time for the pancakes to cook all the way through for sure but they are well worth the wait.

    A tip you could use is the lava cake method, place some chocolate in the middle and as the pancakes cook the chocolate will melt then when you cut into the pancake it will ooze out. Same can be done with cheese if you're making a savoury version of cheese souffle

    Does it make a difference if the eggs are room temperature? Because when i made them before the eggs were cold, is that why mine deflated really fast?

    Hi! I thought egg whites won't produce foam if there's water in it. Can I replace lemon with calamondin? Lemon is not really common where I am right now.

    I wonder if these can be baked in those tall cupcake/skinny cake silicone molds 🤔 I think it would cook the sides so the whole thing is browned on the outside. It would be interesting to play around with. Meringue is not used in recipes nearly enough! 😊

      It should work on all kind of cooking surfaces, even gas stoves, as long as it is turned to low heat. Otherwise the pancakes will burned on top/bottom, and raw on the inside. How low it needs to be, you might need to test it before perfecting it.

    I know every cooktop will perform differently, but I question your 80 degree temperature recommendation since in the video the butter visibly sizzles in the pan - it must be over 100 degrees - and when I tried it at 80 the batter was still quite liquid when I went to flip it. (So much so, that it all ran through the slots in my spatula)
    My second try turned out better, but I raised the temperature on my Breville cooktop all the way up to 140 degrees C

    😭 I don’t know what I did wrong. I did everything exactly how he did it to the T, and they came out kinda flat and taste like egg. I’ve made other recipes of these and they came out great, tall, fluffy. Figured I’d try something new and it was a total flop!

      I have a feeling it's all in mixing it correctly. That's the only reason I haven't made them yet. I've been baking since I was a kid with my mom but I'm afraid to try these. They are so dependant on getting the correct amount of air infused.

      I haven't tried these but all the other recipes I've used, which are by Asian people (Japanese, Korean or Chinese) all have either the same egg to yolk ratio or 1 more egg white than egg yolks. His recipe is the only non-asian one I've seen and the one one that uses way more whites than yolks. Maybe try one of the Asian recipes and see if you have any luck!
