Fluffy Japanese Pancakes (Jiggly Souffle Pancakes)
Вставка

- This is the ultimate souffle pancakes recipe as close as possible to the top Japanese pancake restaurants in Tokyo.
ingredients:
- 76g sugar
- 36g water
- squeeze of lemon juice
- 2 yolks
- 75g flour
- 2 tsp vanilla extract
- 2 tsp baking powder (4.2g)
- 4 tbsp full fat milk
- 6 egg whites
25 min cooking at 80ºC on induction cooker
flip and another 25 min cooking.
equipment:
- ring mold, I could not find the exact same ring mold online, the one in the video is 10x6cm, this one is 10x4cm, so its 3 cm shorter, but it still has the same diameter so it should work: geni.us/ringmold
- induction cooker: geni.us/induction
- similar thin pancake pan: geni.us/creppan
- stand mixer: geni.us/standmixer
I have to say the techniques throughout this recipe were 100% foolproof. I followed this but halved the ingredients as my pancake rings were smaller in size and they turned out to be the lightest and most airy pancakes I have ever tried. Without a doubt chef devaux, your recipe is No 1. It takes time for the pancakes to cook all the way through for sure but they are well worth the wait.
I like the way he has done more Japanese recipes instead of strictly sushi, more enjoyable to watch
I'm glad you appreciate my videos diversity :)
Me too
Intro: "Fluffy Japanese pancakes"
Me: *You had my curiosity, but now you have my attention.*
I see you also like pancakes not just anime
Man ur everywhere
Hey jalal
I didnt even click on skip Ad after that, I was instantly hooked lol
I love how you come up with practical solutions for us, in the form of the tape handle.
I TRULY appreciate your two months of prep for this.
Probably one of the best you tube videos on food that I have ever come across. I am Chef with 16 years experience in good establishments. Hats off to you Sir. Loved the way you have explained the recipe in such a detail including that masking tape handle. Haven't tried ur recipe yet but you have one more fan already. Thanks for this beautiful video.
Thank you! I really appreciate your comment 😄
@@MakeSushi1 My pleasure
Your content is always stuffed with quality!
The Asian market near my house does pancakes once a month and I always miss it. Now I cant wait to make my own, shits gonna be lit!!!
The amount of research that has gone into developing this recipe is simply astounding. I also appreciate the mass measures that you included for the chief ingredients!
Was literally *just* watching the compound butter video like, 'man, it's been a while since homie made a video'. These look awesome- you always upping my kitchen game 👍
Brilliant! Thank you for listing the ingredients, it would be so helpful to list the whole recipe with steps. Love all your videos!
Your recipe seems like the most legit. I love how precise you are - thanks for sharing!
Thanks for being so greatful @Chananigan
I am also soooo obsessed with pancakes and these are goals. I did try some other recipes and your video is the best explanation of how to make these. Tomorrow I will try again with your advice! Thanks!
Those pancakes look so good! Cheers!
Greetings from Seattle Washington. Instructions for these delightful jiggly mounds of pancakes are so very thorough and I cannot wait to make them. Thank you
Why you didn't cut through them? T_T
that is a good point, should have done that
Best chef .. love the way you make pan cake
In the description below the video the 4 tbsp melted butter are missing.

Great job, they look so yummy! I always wish i could give more than just 1 single like for your videos 🙂
Davy: are you a bit of a perfecionist? Well done!
(I was just thinking about my attempts to cook certain recipes.)
Greetings from the far north of Germany.!
Cuts to the chase at 3:02
So nice ,I have to try ,it a must tnk u very much watching here from philippines
You are amazing! Totally worth the 2 months xD
A tip you could use is the lava cake method, place some chocolate in the middle and as the pancakes cook the chocolate will melt then when you cut into the pancake it will ooze out. Same can be done with cheese if you're making a savoury version of cheese souffle
Can't wait to try these! (And thank aliens you use the metric system, I'm tired of converting units) 😊
How did they taste? :o
How nice!! Good stuff
Missed the vids great comeback
hadva crack at this yesterday..was amazing! thank you
Can't wait to try them! ❤🎉
Hope you enjoy the fluffiest pancakes ever
Why you no slice it!!!! I wanted to see the inside. So sad :(
It just looks like the edge.
It’s like cheesecake to me! 🍮🍮🍮
would be interesting to work some cheese into this pancake recipe, I bet it would be tasty!
Perfect buy lid great for steaming
I really love How To Make Sushi
Bravo, Chef.
I'm like wow a new video haven't seen any for a while, check channel history and there have been tons of videos release. Damn UA-cam algorithm.
yes I wish youtube algo was not making me hidden from my fans
I love the way how U explaining it. I had tried exactly how you shown it. My egg batter is very runny. Failed at 1st tried 😔
Yeah same here, maybe we didn’t whisk the egg whites to a harder peak?
Yes to Japanese fluffy pancakes
I love your food creations and the explanation of the cooking chemistry behind it! You have an interesting accent where is it from?
Think I'll wait for Bisquik mix to come out. :)
Really wanna try this, known my luck IL fail at it 😂
Nice 👍
Nice. Best
Does it make a difference if the eggs are room temperature? Because when i made them before the eggs were cold, is that why mine deflated really fast?
*_This looks delicious I can’t wait to try your recipe!_*

Bravo franchement bravo!!!
Hi! I thought egg whites won't produce foam if there's water in it. Can I replace lemon with calamondin? Lemon is not really common where I am right now.
I wonder if these can be baked in those tall cupcake/skinny cake silicone molds 🤔 I think it would cook the sides so the whole thing is browned on the outside. It would be interesting to play around with. Meringue is not used in recipes nearly enough! 😊

I'm old school and don't have induction. What should I using a gas stove?
It should work on all kind of cooking surfaces, even gas stoves, as long as it is turned to low heat. Otherwise the pancakes will burned on top/bottom, and raw on the inside. How low it needs to be, you might need to test it before perfecting it.
I heard you mentioned 4 tbsp melted butter but did not see butter mentioned in your ingredient list. Did I hear wrongly?
Everyone gangster till the Japanese pancakes start screaming banzai
I know every cooktop will perform differently, but I question your 80 degree temperature recommendation since in the video the butter visibly sizzles in the pan - it must be over 100 degrees - and when I tried it at 80 the batter was still quite liquid when I went to flip it. (So much so, that it all ran through the slots in my spatula)
My second try turned out better, but I raised the temperature on my Breville cooktop all the way up to 140 degrees C
Haha it’s very clear how much you care about this recipe.
ENGINEERING A SOLUTION!! VOILA I like that . Mac gyvers your way to pancake
You can easily use a wok pan as a lid, if you have one
Hallelujah thanks
Thanks for the positivity @nysataki, also please share this video.
Can you use the paper mold without the metal ring?
😭 I don’t know what I did wrong. I did everything exactly how he did it to the T, and they came out kinda flat and taste like egg. I’ve made other recipes of these and they came out great, tall, fluffy. Figured I’d try something new and it was a total flop!
Dk Niels did you use the tape handle?
You probably mixed it to hard
I have a feeling it's all in mixing it correctly. That's the only reason I haven't made them yet. I've been baking since I was a kid with my mom but I'm afraid to try these. They are so dependant on getting the correct amount of air infused.
I haven't tried these but all the other recipes I've used, which are by Asian people (Japanese, Korean or Chinese) all have either the same egg to yolk ratio or 1 more egg white than egg yolks. His recipe is the only non-asian one I've seen and the one one that uses way more whites than yolks. Maybe try one of the Asian recipes and see if you have any luck!
@@donnalynn2 using a whisk is a bit whisky eh risky. Just use a spatula instead
I want this
Dude went full Russian Hacker for the Japanese pancake....
Can/have you made a video on jiggly cheese cake?
They will make you fluffy
They will indeed making you fluffy
How To Make Sushi thank you for dis amazing video.. the pancake looks perfect! But i have a few questions.. you just mentioned about using the italian meringue technique for dis pancake.. did you boil the sugar syrup or just dissolve the sugar in room temperature water?
Thank you ❤️
Mine deflates every time I take it out of the pan, what do I do to solve that?
You have no idea how happy I was to find this! All other recipes kept saying cake and I was like “ hmmm ain’t right”
Is it possible to make the pancakes in the oven?
maybe but kind of messes with the name *PAN* cakes, I mean if you bake it in the oven is basically just a cake...
Happy pancake day everyone
A very happy pancake day
wonderful video, perfect recipe, fully watched! Big like, new friend here 🔔, Pls stay in touch 👌🙏
Thanks for being so greatful @Tasty Recipes & Monica ASMR, if you could please share this video.
Are you sure 76 gr sugar and 36 water not 75gr of sugar and 37 gr water?
👏🏿👏🏿👏🏿👏🏿👏🏿
Damn the metric system 👊🏽😫😂
superior system.
Chowhound vid uses parchment rings
i want to see you make them without the metallic shapers
Weren't you supposed to put in water in to not make it dry because I saw it being made that way.
No cross-section!?!
Ok so question I made these one time and they didn’t taste like anything it tastes too eggy but that was It idk what I did wrong like it there a ratio where it won’t taste too eggy
it seems someone scored a couple of extra kilos))
someone ate too many pancakes...
How To Make Sushi :D I like it too))
I hope he sticks to recipe tutorials instead of sushi tutorials
Video recipe timestamp about 6:41 in lol
Can someone convert this recipe pls. I'm in the US
Didn't work for me =( During mixing two parts the thicker one just didn't dissolve properly, and in the end the whole thing lost its consistence...
I can never trust a cooking video where the creator doesn’t try the food.
think he's just had enough of them for the past 2 months
I suppose you tried but it looks like you reinvented the oven and baked a soufflé.
Does it have to be induction cooker??
Hey, I'd Heard Something About Delicious Pancakes?
Awesome video! Please put everything in imperial as well as Metric in the description. I assume most of your viewers are American and I know we are in the dark ages - but all we use is the Imperial system.
jus tried this recipe but mine deflated sadly :(
Why not do this in an oven?
I guess then it loses the term "pan"cake...
have you tried making these fluffy pancakes?
He looks like Philza
Adoreiii! Delícia!
Thanks for being so enthusiastic @By Zu Aires, also please share this video.
Im not gay, but i'd like to marry you... haha, good one buddy
Love looking the left side 😀🔪🔪🔪
Thanks for sharing this!we need 1 hour to make it? I don't think this is the right way.
Ha, ha, ha 1 hour wait for food? No thanks, in my universe no food is worth such a wait! Went to gram & decided to leave as the wait was 30 min.
It's not strictly food, I mean it is a cake, not salty food. 🙂 But if you don't try out low cooking foods, (even better if you cook it yourself,) you are missing out on some of the best food stuff! No offense, I don't try to "tell you how to live"! 🙂 Just highlighting some tasty food worth the patience. 😉
