I used salted instead of unsalted butter so my veggie mix was a little too salty so I'm using unsalted this go round. @@alicianoel6377 Hi! You can just add some salt and omit the butter if you prefer. The seasoning from the fish and veggies, should be sufficient and still flavorful. Also, based on thickness of your fish, if you are using the same seasoning, you can double it and add a 1/4 tsp salt or 1 tsp soy sauce or 1 tsp bouillon. I hope this helps. It was Sint Maarten where I fell in love with whole Red Snapper! OMG!!! I can't wait to try this for dinner tomorrow! As an American, it isn't our culture to eat fish with the head on but as a traveler I am always open to try local foods the way they are prepared in the country I am visiting. I've been eating it like this ever since I visited in 2017!

My dear, she does NOT say what was in that rub but there are 2 great channels on UA-cam that has the best recipes on Red Snapper, especially whole one. I tested their recipes and it was SUPERB! One channel is "Nanaaba's Kitchen" ( I made the recipe which you broil the fish for 10 minutes each side and the taste was fantastic! The skin was crispy and inside was perfect! The other channel is "Cooking with Claudy" Both ladies give out the ingredientes in details. I even use Claudy rub with Nanaaba's broil method and it came out fantastic!

Hi! Yes you can use bluefish, however, bluefish is a softer fish. It's also has a more gamey taste than red snapper. If possible, the fresher it is the better it will taste.

@@viniciacrenshaw6997 Sure! I used the dry rub from "Cooking with Claudy" and the BROIL method from "Nanaaba's Kitchen", ( keep an eye on it because you know broil is very quick. I also placed the peppers and onions on the bottom( I took out the seeds from the jalapeño) and put the fish on top. The fish was done in 20 minutes, 10 on each side ( the fish was 2 and 1/2 lbs). It was SUPERB! The skin was so crispy and the inside was terrific and didn't get dry at all! The peppers and onions was so tasty! We ate every bit on the plate! Oh yeah, I forgot to mentioned that I put the rub on the fish and let it sit for 3 hrs before I placed in the oven. You can prepare the whole tray in the morning, cover with plastic wrap and put it in the refrigerator and cook it later.
