- Hello, beautiful people! 🍂 Welcome to my first UA-cam video in a long time where I share delicious and comforting vegan recipes perfect for fall. In this video, you'll find easy, quick, and cozy breakfasts and desserts featuring seasonal ingredients like apples, cinnamon, and pumpkin. These recipes are great for warming up during the colder months, and they're all 100% plant-based! 🌿

Vegan French Toast with Banana 🍌 (inspired by Minimalist Baker)
INGREDIENTS:
1 ripe banana (or half if you prefer)
3 tsp cornstarch
1/2 cup (120ml) plant milk
2 tsp agave syrup
1 tsp vanilla extract
1/2 tsp cinnamon
Pinch of salt & a tiny bit of turmeric
2 slices of bread
2 tsp vegan butter
INSTRUCTIONS: Mash the banana, then mix all ingredients for the batter. Soak the bread for 5 minutes, then cook in a pan with melted vegan butter until golden and serve with prefered toppings :)
Grilled Vegan Cheese Sandwich 🧀 (inspired by Minimalist Baker)
INGREDIENTS
2 slices of bread
Vegan butter
Vegan cheese
INSTRUCTIONS: Spread vegan butter on both sides of the bread. Cook until crispy, then add vegan cheese, lower the heat, and cover until the cheese melts.
German Apfelstreusel (Apple Crumble) 🍏 (inspired by EinfachBaken)
INGREDIENTS
300g (2 + 1/2 cups) wheat flour
200g (1 cup) white sugar
1/2 tsp cinnamon
Pinch of salt
180g (3/4 cup) cold vegan butter
1200g (6-7) apples (peeled & sliced)
Juice of 1 lemon
50g (1/4 cup) sugar
100ml (1/2 cup) water
2 tbsp starch
1 packet vanilla sugar
INSTRUCTIONS: Mix the flour, sugar, cinnamon, and salt. Add the cold vegan butter and combine until crumbly. Chill the dough for at least 30 minutes. Prepare the apple filling by cooking the apples with the lemon juice, sugar, water, and starch mixture until thickened. Assemble by pressing two-thirds of the dough into a pan, add the apple filling, and crumble the remaining dough on top. Bake at 180°C (350°F) for 1 hour.
Chocolate Chip Pumpkin Loaf 🎃 (inspired by @ georginaburgess_)
INGREDIENTS
2 cups (240g) wheat flour
1 packet baking powder
1 tsp baking soda
Pinch of salt
1 cup (200g) sugar
1 acket vanilla sugar
Spices: 2 tsp cinnamon, 1/4 tsp nutmeg, 3/4 tsp ginger, 1/3 tsp cloves
1 cup (240g) pumpkin puree
1/4 cup (60ml) vegetable oil
2/3 cup (160ml) plant milk
Chopped vegan chocolate (6 or more squares)
INSTRUCTIONS: Mix dry ingredients, then add wet ingredients. Fold in chopped chocolate. Bake at 180°C for 50 minutes or until a fork comes out clean.
