  • The Kill Devyl Reef from Shannon Mustipher is an excellent drink that showcases Demerara Rum, Rhum Agricole Blanc, and an Overproof Jamaican rum. These all work together extremely well and balance nicely with the passion fruit, lime juice, and honey.

    📖 Recipe(s) 📖
    ¾ oz fresh lime juice (22.5 ml)
    1 oz of passion fruit juice (30 ml)
    ½ oz honey (15 ml)
    ½ oz St Elizabeth All Spice Dram (15 ml)
    ½ oz of Rum Fire or another Overproof Jamaican (15 ml)
    ½ oz Rhum Overproof Agricole Blanc (15 ml)
    2 oz Hamilton 86 (60 ml)
    I adapted this with:
    ¾ oz of a 2:1 honey syrup
    ½ oz passion fruit puree + ½ oz water + 1 bar spoon 2:1 simple syrup

    I appreciate the addition of the rum substitutions at the beginning. The extra steps of navigating the many rum types and selecting the option that's available to me is always a bit of a hassle. Little things like this don't go unnoticed, and thanks for another great video!

    I find that high abv drinks poured over crushed ice hit strong initially. But they ease out as you sip and the ice melts.

    Perfect washline on that rum coffee. I had this on my todo list for a while now I guess I must make it. Love the book all the recipes I tried have been delicious

    I didn’t have the exact Overproof rums so used the ultimate Mai tai mix, with half an ounce of the Agricole. Awesome drink

    Just made using Hamilton 86, Clemente, and Smith & Cross - not sure how close that gets me but sipping it right now and it’s quite tasty. *chefs kiss

      Not sure about the "Reef" part but Kill Devyl is a historic name for what we now call Rum.

    Thanks for including your ratios for the passion fruit juice! Jumex used to sell a canned PF nectar/juice, but it appears to have been discontinued :(

    Quality unmatched yet again! Can’t wait to try this…. Could you explain why you did the passionfruit juice the way you did? Would not melted passionfruit purée work on its own as a juice?

      There’s not a ton of uniformity to what’s sold out there, but the passion fruit juice I’m used to is much thinner and sometimes has added sugars. It’s essentially drinkable. While the purée is much thinker and tart. Some purées have some sugar added and some don’t.
      Not sure exactly what the book had in mind for which brand to use but since it said juice I assumed it would be best to water down the purée.

    I found out about Rum Fire not long ago but I forgot to get some while getting supplies yesterday. When I get some I will definitely make this drink and that coffee but the coffee won't be for me. No matter what drink i have sitting on the side table next to the couch, when my wife walks by, she will take a sip... won't she be surprised?

      Not certain but I assume this has nothing to do with the Chartreuse and Agricole “Kill Devil” cocktail.
