I just found your channel and over 25 years ago I read an article in Reader's Digest that diabetes would eventually be rampant among Americans. How true that is! I am almost 100% carnivore, 61 years old and my dad told us as kids if it didn't come from the ground, or it didn't have a mother you should not be eating it!
At this point, if I decide to live on air or water it's still filled with toxins. It's a never ending battle. I do appreciate the time you take to educate us on making healthier choices in this uphill battle. These days I am trying harder and harder to grow more and source more natural foods like farm fresh eggs, milk, and big game meat that's hunted by friends but it is certainly NOT easy to even source real food anymore.

Lillie I made 2 grilled cheese sandwiches the other night and today when I bent over to pull the scales away from the wall, and to my surprise I couldn't bend that far. I hope my arthritis in my hands doesn't flair up too. I learned my lesson! Ground beef in a bowl with butter and chopped onion and Redmond's salt.
The few times we eat pasta its the simple ingredient stuff that Aldi sells imported from Italy. Usually if we are eating a pasta dish I add extra non pasta ingredients. During the summer we canned a ton of home grown sugar free pasta sauce. About 85% of the ingredients are organically grown at home. The other 15% is organic from store.
I miss noodles so much, but i do not miss how they made me feel after eating them!! Great video!! Im going to share this with my young adult daughter in hopes she will watch it. ❤ I unfortunately did not have this information when raising her, or I would have never bought her that stuff.
Hey Lillie, I appreciate your video, but when you said 80% of adults have diabetes or prediabetes, that was alarming so I looked it up. It says roughly 98 million Adults have diabetes or prediabetes and 8 out of 10 don't know it. I looked up the number of Adults in the US and it's roughly 262 million. That means roughly 37% have diabetes or prediabetes, which is still a lot, over a third of US adults. But just wanted to let you know that. 80% would be crazy.
There's an estimated 300 million Americans in the country. Diagnosed diabetes: 29.3 million people have diagnosed diabetes Undiagnosed diabetes: 9.7 million people have undiagnosed diabetes Pre-diabetes: 115.9 million people have pre-diabetes According to my math is closer to 50% of Americans without age bracket. But it all depends on what time you research it lol. But like you said it's WAY to many. Blessings from Montana
you have to remember the FDA or whoever decides, has said HbA1c of 6.2 means diabetes, prediabetes is a guess, meaning the number with pre-diabetes varies according to where you put the range. The reality is most people 5.8 or above already have symptoms. One could also say pre-diabetes is a wider range from 5.5 so the numbers can very.

I'm able to get tortellini imported from Italy and it caught my eye that the mushroom tortellini had a good vitamin d content. I found out that in Europe they expose their mushrooms to light and like us the mushrooms produce vitamin d within them. That said, even though the ingredients in this tortellini are as good as you can get, it's still a lot of wheat so I only eat it as an occasional treat, for example when I have some nice red tomatoes and get a hankering for some homemade meat sauce.
I understand the point of the video. If I eat pasta I definitely go for something with less ingredients, probably gonna cut back on even that more, same with everything else, but I think the biggest problem is the U.S. turning food into a business. Most of us aren’t even eating food anymore. We’re eating chemicals and science experiments. Deirbergs has a good selection of better choices but they’re so expensive. I’m like do I buy the expensive “organic” choice or do I buy a regular potato and regular 3:25 ground beef. So frustrating lol

The 80% prediabetes statistic was misinterpreted, it was indicating that 80% of people with prediabetes don’t know it. The amount of adults living with prediabetes or diabetes is probably closer to 41.5% in the US
As a healthcare provider, I can attest that about 80% of adults are insulin resistant. Not necessarily prediabetic, but heading that way. A person can have insulin resistance for years before it ever shows in their HbA1c, which is why I recommend a fasting insulin level in conjunction with a HbA1c. Hyperinsulinemia is inflammatory and I believe one of the root causes of chronic disease.
My favorite pasta alternatives are making (1)an Italian dish cooking fresh green beans with tomatoes, onions, garlic and herbs, and (2) another Italian dish where you bake flounder with a topping of fresh home made marinara sauce and black olives. The fish dish really makes you think you are eating spaghetti, especially since the flounder is not a dominant flavor and it is the spicy marinara sauce with olives and fresh herbs that is the best part for me of eating pasta dishes like puttanesca. I am also experimenting with noodles made from edamame and mung beans, as well as chickpea and red lentil pasta noodles. The fiber and protein content are much higher than semolina pasta and the carbs are easily half, even before adjusting for the fiber content. Other choices to consider are pasta noodles made from cauliflower or brown rice which some people on YT say have very good texture and flavor, better than the red lentil or even chickpea noodles. Just as in regular pasta dishes the type of sauce you choose may be an important factor in the success of the dish depending on the size and texture of the noodles and whether the main ingredient in the noodles have a remnant strong flavor you may want to offset.

I love your videos, Lillie! I know you put so much work into them and it shows! I have learned so much from all of your content and I am so thankful for your vulnerability to help others. A thought for a possible thing to research in the future that may help many. I have been looking around for a deep dive on rice. My family is mostly animal based and I want to be 100% but, with prices, I still feel the need to sometimes fill out our meals with a cheaper option. So what I have been doing is sometimes including some meals with Mexican rice, fried in tons of lard and cooked in bone broth or garlic rice, fried in tons of ghee and cooked in bone broth. I know there are concerns with arsenic (more so in brown rice so we only eat white jasmine or basmati rice). I soak my rice overnight and rinse it multiple times, but I still don't feel great about feeding it to my family. Thanks again, Lillie!
From a poor Canadian family. Pasta and potatoes 7 days a week. Grandma passed at 96, grandpa 85. Mom still going at 90, dad gone at 88. Pasta isn't the problem.
I also grew up on Kraft macaroni and cheese and other cheapo processed garbage. I now call those products “Over-processed Anti-nutrient Non-food” and you couldn’t pay me enough to entice me to eat them anymore.
Great video! I have 2 autoimmune disorders ( one being Crohns) , so I’m non-GMO, no dairy, NO GLUTEN,seed oils, etc. I find good ( nutritious, organic, gluten free) options at the GROCERY OUTLET all the time. Pasta with less than 4 ingredients! (I LOVE spaghetti squash,also!)
Grocery Outlet is a GREAT place to source discount health foods! It is often priced cheaper than the industrial food there because a lot of their clientele is low income (self included) and of the old mindset that organic or gluten free is "hippie food". So, I stock up when they get good wholesome foods there. The products are hit and miss. Overstock, discontinued, or close to date...so you cant count on certain items everytime, but, I shop there first and often find what I need. You can still fill a shopping cart (or buggy 😉) for about $100. I love G.O.! 😁
@ Yes! I go there first and I have found some new favorites that I can actually eat and doesn’t taste like 💩. They always have a good selection of gluten free stuff and AMY’S meals at my store and bamboo tp and paper towels(and other products for people with sensitivities)I also picked up an air purifier that is the same size as my Levoit($99) and uses the same filters, but it has MORE features ( like measuring the air quality at a glance) and it was only $39- made by the INSTANT ( pot) company!(: ( I always check the dates there!)

Fresh baked pumpkin has a similar texture to spaghetti squash, but is cheaper and much easier to cut. I have to use a pruning saw to cut spaghetti squash. Since pumpkin is seasonal, I baked and froze several of them.
I love just making a pasta-free goulash with stuff like olives, mushrooms, and artichoke hearts to give it some bulk. And of course it’s gotta be a meat sauce 😎
Not sure gluten is as much the issue as the crappy wheat in the U.S. When all of a sudden it seemed like 'gluten intolerance' people were coming out of the woodwork it didn't seem like a people problem as much as it did a problem with the food. The name of the game with commercial farming is cross breed to maximize shelf life and maximize yield. Because of that quality gets lost in the translation. The main pasta I eat is spaghetti, and it's the Costco spaghetti that's imported from Italy.
I think that pasta itself is not a big problem. The big problem is sauces and toppings. Many pasta sauces contain added sugar and other unhealthy chemicals.
Nah you make a thick avocado cottage cheese garlic sauce for those zucchini noodles as a side along with your favorite protein for that type of dish and you don’t even notice it

It's interesting that you chose the maruchan ramen for your example. I am type 2 diabetic. I keep a close watch on my Blood Glucose. I have shied away from pastas for years because of precisely what you have pointed out. But a couple years ago, I noticed something. While pretty much any other pasta spikes my BG, maruchan ramen almost does not. My bg is as affected with the Maruchan Ramen, as it is with most vegetables. Not bad at all. Regular pasta, especially macaroni or spaghetti... Big spike in BG... I won't eat those if I have a choice. I don't know if this is the case with other ramen. I haven't tried. But the maruchan is something that I have continued to eat, because it makes pretty much the same spike as broccoli, or tomatoes or beans.
Very frustrating. My issue is the cost difference between eating the healthy and eating to survive. I've been on the health path for many years, and a good wholesome diet is a priority for me. Problem is, I'm not a very high earner when it comes to my income, and it's been quite the struggle to continue to eat the way I know is best for me and for achieving my health and fitness goals. The best meats (organic, grass fed grass finished), organic eggs, any organic vegetables, all come with a premium price tag attached to them, sometimes more than double the cost. The health/food industry has tapped into this and doesn't make it easy for a medial earner to stay on a healthy option path. I love the spaghetti substitute mentioned in this video, I occasionally do the spaghetti squash swap instead of pasta, but only every once in awhile. Where i live a single spaghetti squash can cost $6-7, and thats not even organic, about a 500% increase in cost compared to the large pack of pasta. Ever seen what organic cuts of meat go for? A ridiculous difference in cost, also at least double as the non organic antibiotic laced options. It seems if you wanna make the most of being healthy with diet and consuming all the right things to make the most of your health, it takes extra $$$. No way around it, a healthy organic diet comes with a significant price increase. I live about as simple of a life as one can, and yet still, I cannot afford to eat the way I want, the way I know I need to eat to stay at an optimal level of health. Want to only eat the healthiest foods available? better start making some extra bucks, because you ain't gonna do it on an average salary. Nonetheless, awesome stuff as always Lillie, keep up the good work!

A lot of this is all a shift in culture and how people are so easy to manipulate, especially if they have a full belly with a nice dopamine hit. Back when I was a kid (it was a while ago) kraft dinner was called just that, not mac & cheese. It was also a side dish and NOT a meal in and of itself. A box of kraft dinner had specific directions that it was 4-6 servings. Think about that. The same box that used to be intended to be equally shared amongst a family of 5 (with dad getting a slightly larger helping) is now considered a single serving. And we wonder why diabetes is so commonplace? Pasta was also not the bulk of a pasta based meal. There was a LOT more that went along with it but over time with the increase in pre-made processed foods the "food" manufacturers started replacing the expensive ingredients with super cheap pasta and the consumer was happy because they got just as much food for the same price. Once people start paying attention to how they are being manipulated (on the good end) and outright lied to (on the bad end) and start actually getting ANGRY about it they'll never change. Stop thinking that ANY company that is selling you food honestly cares about you or your health. Maybe you might stumble upon one that does (at first) but the reality is that these companies ONLY exist to squeeze as much money out of you as they can. Once they know they can't get your money they will turn their back on you and move onto the next sucker. So best to just not be that sucker in the first place.
I really love this whole video. I would add one other piece of information. In the past here, and in other countries still they use a different type of grain. If America adopted the practices of more primitive cultures and of other countries it would make us healthier, and would also make us less sick. Great video though.

Unless it's from Europe I avoid it and it only occasionally. It's different in the USA. I hear all the time when in Italy, it tastes so different and even people with stomach issues can it it in Italy with no issues, hmmmmm. So for now I stick with very occasional whole wheat pasta when at someone house, maybe a cup, no more. When I say very occasionally this is maybe 4-5 a YEAR. I think I'm safe. Thankfully I don't have any issues when eating it, have plenty of meat along with it and I still eat my veggies too - BTW, LOVE Spaghetti squash and thank you for the "egg" noodle idea, genius!!!
Whole grains have nutrients and protein. Pasta is not the problem. The problem is the processed flour. If using freshly milled flour your flour is not the problem.
I'd argue that if you really like pasta then making it by hand is a good option. Most store bought pasta is made from a water and flour dough. I make an egg dough that's about 7 or 8 eggs for a pound of flour. You can also make ricotta gnocchi that's actually more ricotta and egg than flour. The recipe that I use for that is out of the American Sfoglino book and it's great and really easy to make! Also, when you make your own you can make a filled pasta and put something that's more protein packed inside of it. And finally, when you make fresh pasta it's a lot more work so you don't tend to make it all the time and it can be more of a treat than a staple food. Love the channel!
Nothing against making your own pasta, but most dry pasta at the store is already just durum wheat semolina. And if it's made in Italy, then it's not sprayed with glyphosate.
I think pasta is still better than sugar-filled cereal. So if you need quick easy and cheap junk food sometimes, pasta might not be that bad. But if you can, add a decent sauce with lots of ground beef in it! And maybe don't make it a regular practise, but from time to time.
Lucky you getting fooders, food you actually cook like beans and taters raised chickens so eggs and chicken, yeah I'm a hillbilly raised a garden canning but lately working so much process food getting away from it now but still have a hot dog or fried bologna sandwich 😊
I only buy pasta made in Italy. The wheat grown there is different and treated differently and isn’t as bad for you. That being said I only eat pasta or rice once or twice a month.

Reckon it's puzzling how folks who go from vegan to meat, worry so much about protein and nutrients. Didn't eating eggs and cows fix the problem? I grew up in the 70s, when people are eggs and bacon, meat n pertaters

1. Pasta is rich in starch, which is an important energy source. 2. Our bodies recycle vitamins and minerals, so not every meal needs to be rich in them. 3. Protein is not the most important macronutrient, carbohydrates are. So many people are not deficient in protein, this is a lie. Hospitals are not over following with protein deficient patients. As long as you're meeting your caloric intake, your protein needs will be met. Not to mention, the body recycles amino acids. 4. You're joke.
DEPENDS on where you are really. Pasta in Italy, just like bread in France is not the same as there in the US. Haven't we heard story after stories about people who ate more in other countries during their vacations and lost weight and also became healthier?? Just because you have a BIas against carbs doesn't mean you can just villify an entire food group!

Aldi has a low carb product that i substitute for pasta. It is called Heart of Palm.

So what I have been doing is sometimes including some meals with Mexican rice, fried in tons of lard and cooked in bone broth or garlic rice, fried in tons of ghee and cooked in bone broth. I know there are concerns with arsenic (more so in brown rice so we only eat white jasmine or basmati rice). I soak my rice overnight and rinse it multiple times, but I still don't feel great about feeding it to my family. Thanks again, Lillie!

Great video! I have 2 autoimmune disorders ( one being Crohns) , so I’m non-GMO, no dairy, NO GLUTEN,seed oils, etc. I find good ( nutritious, organic, gluten free) options at the GROCERY OUTLET all the time. Pasta with less than 4 ingredients!

Grocery Outlet is a GREAT place to source discount health foods! It is often priced cheaper than the industrial food there because a lot of their clientele is low income (self included) and of the old mindset that organic or gluten free is "hippie food". So, I stock up when they get good wholesome foods there.
The products are hit and miss. Overstock, discontinued, or close to date...so you cant count on certain items everytime, but, I shop there first and often find what I need.
You can still fill a shopping cart (or buggy 😉) for about $100.

They always have a good selection of gluten free stuff and AMY’S meals at my store and bamboo tp and paper towels(and other products for people with sensitivities)I also picked up an air purifier that is the same size as my Levoit($99) and uses the same filters, but it has MORE features ( like measuring the air quality at a glance) and it was only $39- made by the INSTANT ( pot) company!(:

Fresh baked pumpkin has a similar texture to spaghetti squash, but is cheaper and much easier to cut. I have to use a pruning saw to cut spaghetti squash. Since pumpkin is seasonal, I baked and froze several of them.

Not sure gluten is as much the issue as the crappy wheat in the U.S. When all of a sudden it seemed like 'gluten intolerance' people were coming out of the woodwork it didn't seem like a people problem as much as it did a problem with the food. The name of the game with commercial farming is cross breed to maximize shelf life and maximize yield. Because of that quality gets lost in the translation. The main pasta I eat is spaghetti, and it's the Costco spaghetti that's imported from Italy.
I think that pasta itself is not a big problem. The big problem is sauces and toppings. Many pasta sauces contain added sugar and other unhealthy chemicals.
Nah you make a thick avocado cottage cheese garlic sauce for those zucchini noodles as a side along with your favorite protein for that type of dish and you don’t even notice it

It's interesting that you chose the maruchan ramen for your example. I am type 2 diabetic. I keep a close watch on my Blood Glucose. I have shied away from pastas for years because of precisely what you have pointed out. But a couple years ago, I noticed something. While pretty much any other pasta spikes my BG, maruchan ramen almost does not. My bg is as affected with the Maruchan Ramen, as it is with most vegetables. Not bad at all. Regular pasta, especially macaroni or spaghetti... Big spike in BG... I won't eat those if I have a choice. I don't know if this is the case with other ramen. I haven't tried. But the maruchan is something that I have continued to eat, because it makes pretty much the same spike as broccoli, or tomatoes or beans.

My issue is the cost difference between eating the healthy and eating to survive. I've been on the health path for many years, and a good wholesome diet is a priority for me.
Problem is, I'm not a very high earner when it comes to my income, and it's been quite the struggle to continue to eat the way I know is best for me and for achieving my health and fitness goals.
The best meats (organic, grass fed grass finished), organic eggs, any organic vegetables, all come with a premium price tag attached to them, sometimes more than double the cost. The health/food industry has tapped into this and doesn't make it easy for a medial earner to stay on a healthy option path.
I love the spaghetti substitute mentioned in this video, I occasionally do the spaghetti squash swap instead of pasta, but only every once in awhile. Where i live a single spaghetti squash can cost $6-7, and thats not even organic,
about a 500% increase in cost compared to the large pack of pasta.
Ever seen what organic cuts of meat go for? A ridiculous difference in cost, also at least double as the non organic antibiotic laced options.
It seems if you wanna make the most of being healthy with diet and consuming all the right things to make the most of your health, it takes extra $$$.
No way around it, a healthy organic diet comes with a significant price increase.
I live about as simple of a life as one can, and yet still, I cannot afford to eat the way I want, the way I know I need to eat to stay at an optimal level of health.

A lot of this is all a shift in culture and how people are so easy to manipulate, especially if they have a full belly with a nice dopamine hit. Back when I was a kid (it was a while ago) kraft dinner was called just that, not mac & cheese. It was also a side dish and NOT a meal in and of itself. A box of kraft dinner had specific directions that it was 4-6 servings. Think about that. The same box that used to be intended to be equally shared amongst a family of 5 (with dad getting a slightly larger helping) is now considered a single serving. And we wonder why diabetes is so commonplace? Pasta was also not the bulk of a pasta based meal. There was a LOT more that went along with it but over time with the increase in pre-made processed foods the "food" manufacturers started replacing the expensive ingredients with super cheap pasta and the consumer was happy because they got just as much food for the same price. Once people start paying attention to how they are being manipulated (on the good end) and outright lied to (on the bad end) and start actually getting ANGRY about it they'll never change. Stop thinking that ANY company that is selling you food honestly cares about you or your health. Maybe you might stumble upon one that does (at first) but the reality is that these companies ONLY exist to squeeze as much money out of you as they can. Once they know they can't get your money they will turn their back on you and move onto the next sucker. So best to just not be that sucker in the first place.
I really love this whole video. I would add one other piece of information. In the past here, and in other countries still they use a different type of grain. If America adopted the practices of more primitive cultures and of other countries it would make us healthier, and would also make us less sick. Great video though.

Unless it's from Europe I avoid it and it only occasionally. It's different in the USA. I hear all the time when in Italy, it tastes so different and even people with stomach issues can it it in Italy with no issues, hmmmmm. So for now I stick with very occasional whole wheat pasta when at someone house, maybe a cup, no more. When I say very occasionally this is maybe 4-5 a YEAR. I think I'm safe. Thankfully I don't have any issues when eating it, have plenty of meat along with it and I still eat my veggies too - BTW, LOVE Spaghetti squash and thank you for the "egg" noodle idea, genius!!!

Home grown (in season or canned) vegetable soup in spaghetti sauce very good.
I'd argue that if you really like pasta then making it by hand is a good option. Most store bought pasta is made from a water and flour dough. I make an egg dough that's about 7 or 8 eggs for a pound of flour. You can also make ricotta gnocchi that's actually more ricotta and egg than flour. The recipe that I use for that is out of the American Sfoglino book and it's great and really easy to make! Also, when you make your own you can make a filled pasta and put something that's more protein packed inside of it. And finally, when you make fresh pasta it's a lot more work so you don't tend to make it all the time and it can be more of a treat than a staple food. Love the channel!
Nothing against making your own pasta, but most dry pasta at the store is already just durum wheat semolina. And if it's made in Italy, then it's not sprayed with glyphosate.

I think pasta is still better than sugar-filled cereal. So if you need quick easy and cheap junk food sometimes, pasta might not be that bad. But if you can, add a decent sauce with lots of ground beef in it! And maybe don't make it a regular practise, but from time to time.

I only buy pasta made in Italy. The wheat grown there is different and treated differently and isn’t as bad for you. That being said I only eat pasta or rice once or twice a month.
