My book says that when telling time up until the half hour or the "6 on the clock" you must phrase a sentence as "son las once y veinte." But when the minutes are past that half hour then you're supposed to phrase it with "menos" instead. Por ejemplo- "Es la una menos cuarto" Was how you presented it in the video what you learned or something you experienced through immersion? I'm just trying to clear up my personal confusion (especially since your way sounds much easier!)
I know native speakers. You can use both the "menos" way (which is preferred in some countries) or the simple no subtraction method. It's good to be familiar with both in case someone says them to you. Hope that helps!
