  • In Kashmir, India, weddings and other special occasions revolve around a 25- to 36-course meal known as a wazwan. The feast takes two days to prepare and requires a large team of experienced chefs known as wazas. In Kashmiri, "waza" means "cook," and "wan" means "shop."

    For anyone wondering about the number of guests, apart from close family and friends, the guest list also includes neighbours and extended family. It doesn't always go up to 700+ people. It very well can, but it really depends on how lavish we want the ceremony to be. When talking about the number of guests invited to a wedding, we don't count the people we count the "tramis". 1 trami = 4 people

      "Trami" is the huge copper plate on which the food is served. Four people eat on a single plate.

      So how much does it cost for a wedding, Let's say 700 guests like this, or 1000? I am assuming it'll be expensive AF, given the wood, spices, and meat. Labour is not even considered here.

    My wedding was last month, we invited 2500 people. Almost 4000+ coming, I'm glad and also terrified that the food and seat are not enough. Luckily somehow we managed to serve all the guests but many people that help up in the back say it's a logistical nightmare. 😂 And someone brings 4 dozen boxes of Redbull to cope with the staff to keep going. Someone said after the event someone almost collapsed from exhaustion. Really grateful to all of them who work hard on the event. ❤

      Food is usually on a per plate basis or a full on contract basis.
      Per plate is usually 150-250 INR i.e. 2-3 USD in a tier two/three city.
      For anyone else wondering, 4k is the norm not an exception. You just accept the fact that about a couple hundred guests would be strangers just there for free food.

      700 guests in marriage are common in communities who have less population. But it's totally different scale in marriages of big population communities. Mini 1200 people and upto 2500.
      I have served in such marriages

    For Everyone who is complaining about flies .it's because they don't cook at a certain place.they go to
    The place where wedding is .and you know everyone has different empty areas . ( Also know that most of the weddings here happen during autumn (rarely in summer) so there are no flies around that time as its starts to get pretty cold here

      Also the fact that they are not flies but mostly bees and wasps which are present because of the abundance of fruit trees in Kashmir, which they pollinate :)

      @@AL-tl9mt its more close it persian, present day Iranian cuisine, but that goes for a lot of things in India, but the culture is definitely very close to Iranian culture/tradition but thats to be expected considering the history of Kashmir, regardless truly beautiful stuff

    Honestly 700 people is rookie numbers in regards to indian marriages. Average wedding has 1500-2000 people.

    I'm from Kashmir it is a real feast ( and a lot of work for cousins who server it to guests😂) ...
    EDIT: no of guests are not measured as numbers but as per ''tramies" ( big copper plates ) in which 4 people eat together . And count is usually for middle class from 70 -110 tramies . And can go upto 200 tramies

    I once had chance to enjoy a Trami at the wedding of my friend's uncle 35years ago.. I still cherish the taste and i think it will never fade away. I wish I had friends in Kashmir who would invite me to a wedding..

      these bags are made from defective packaging material (general bad cut or misprint), this way the company recoups the cost of damaged bags and people can buy cheap food grade bags in bulk

      in many Asian countries, Married is about Big FAMILIES,
      NOT about Groom's/Bride's Friends and Colleague,
      Thus, often The Parent's who will pay the bill,
      to see Many Guest (even in hours duration) is better than Luxury, Comfort, Vacation,
      .
      700 people, including family of each guest,
      4 people/guest = 175 guest for the Groom and Bride FAMILIES,
      175/2 = 88 Guest for each Groom/Bride Families
      88/2 = 44 guest for Groom/Brides Mom's and Dad's
      44 Guest = for Dad's/Mom's Cousins from each GrandPa and GrandMa (8 family guestes, total 16 each)
      that leaves only 28 guest for each Mom's/Dad's Friends INCLUDING Dad's Office Colleage,
      often neighbour and Groom & Bride FRIENDS were left out, or in very minimum numbers.

      30 people would be just my close close close relatives on my grandmother's side. Average guest list in my family is 850-1000. Highest i have attended is 3000+ and lowest was 500 guests.

    Have had Goshtaba here in Pakistan at an authentic Kashmiri restaurant - it is one of the best, most succulent meat dishes I have ever had.

      Typical Indian dish? There's no typical Indian dish, each region of India including Kashmir and hills have their own seperate delicacies.

      There is no 'typical' indian dish. All the butter chicken and naan you see is not what we eat everyday, just enjoyed on special occasions. Real indian cooking is very different from what you would get in the west and varies from state to state.

      a lot of foreign companies sell their defective (generally not cut properly or misprinted) packaging material to third world countries where then it is used to make cheap disposable bags, a great way to coup up the loss for the company and cheap way for us to buy food grade disposable bags

      the militarization of their region to the extent the UN has classed it the most millitaeized zone on earth:
      Kids and adults blinded from pellet guns of Indian occupation soldoers
      rape of women of all ages as a way to exercise control and fear (kunan pushpora is widely known and documented;
      enforced dissapreances; trafficking;
      being threatened to post pro-nationalism sentiments online;
      Not allowed access to their mosques and when they are they are stormed by Occupation army and held at gunpoint to chant Hindu slogans.

    It's been an hour and already ignorant people are complaining about the flies, which are actually honeybees, so here's a reminder: Insects aren't inherently unhygienic, are also meat, and they won't contaminate food by their mere presence. Most notably, chocolate is known for having bug pieces in it because they live in the cocoa pod itself. Figs too, as they depend on digesting the fig wasp to fruit.
    Now, focus on the actual food instead of being annoying

      Most insects ARE inherently unhygienic, especially ones that are known to come into contact with the ground/feces. Flies can give you horrible food poisoning (especially if they sit on the food after cooking for a prolonged period of time) and I hate how most people don't take it seriously.
      Also, if you look at 2:40, there's flies going along with the bees.

      There are definitely flies jumping on the meat those are not bees ,unfortunately flies are extremely unhygienic they carry bacteria from stuff they sit on and they vomit out their feaces onto the food they sit on

      We have been using utensils for foods since we can remember, but you guys need to use dirty hands to mix a bowl of soup, to grab spices, to plate a dish and so on. All while cooking on the floor, full of dirt.

    After reading the whole comment section, i felt i needed to interrupt the hate around and clear some things up.
    First of all, maybe the number is so large and yeah, everyone feels that 700 is much but that's our culture (to share the moment with your relatives). In some weddings, the guest count goes upto 1000...so no need to be surprised at 700...XD
    And i dont know about the flies and bugs but yeah, now in the weddings people watch out for these wazas to keep an eye on the food safety measures taken by them and people too make batches to keep an eye on the hygiene of the food. i dont know about srinagar but other districts are so conscious about their health.
    Also, our culture is so important to us. Like, we dont eat wazwans regularly but only when asked on wedding and one person serving can provide a full family dinner so we often pack the stuff with us so that someone in our family could taste it too.
    i have never in my life heard that someone felt sick because of wazwaan....lol. And people have self control to not eat all of it...most of it is packed in bags.
    This is a culture i adore beacause 4 people eat on a single plate(women and men separate) and we come to know about the 3 other persons that join us in eating.
    well, yeah, it can be very expensive but it's what it's .
    i hope it will clear things up!!!

      Thus, often The Parent's who will pay the bill,
      to see Many Guest (even in hours duration) is better than Luxury, Comfort, Vacation,
      .
      700 people, including family of each guest,
      4 people/guest = 175 guest for the Groom and Bride FAMILIES,
      175/2 = 88 Guest for each Groom/Bride Families
      88/2 = 44 guest for Groom/Brides Mom's and Dad's
      44 Guest = for Dad's/Mom's Cousins from each GrandPa and GrandMa (8 family guestes, total 16 each)
      that leaves only 28 guest for each Mom's/Dad's Friends INCLUDING Dad's Office Colleage,
      often neighbour and Groom & Bride FRIENDS were left out, or in very minimum numbers.

    Goshtaba definitely has its place, but you’d want to try Marchwangan korma ( Mutton cooked in Red Chilli gravy) fret not, Kashmiri chilli is super red but low on the Scoville scale!

    For those who are in thinking of copper, these utensils are made by hammering of copper into that shapes and as u know that Copper is easily oxidised by oxygen and moisture and forms a green layer , the maker uses galvanization method to protect the cu layer ..........hope that helps to some people..

    Unfortunately the groom's family end up many times wit debts trying to feed strangers that don't even care about the wedding and came only to eat. Let alone food waste that happens. It's the same issue with Arab countries.

      it is not necessary to do, you host a wedding according to what you can afford, and "strangers" what are you yapping about they are generally relatives, friends and neighbours, and they pretty much always bring gits with them (generally money) which helps to recoup the cost of the wedding

      It's not put on dirt rather than plates and large metal trays, a table is inadequate to host the amount of things that need to be prepared, its prepared outside since most of it is cooked on wood fire as you saw in the video

    "Yakhni" is not curd gravy it is kind of just an umbrella term for stews and soups and broth etc... also as a a person who's family is Kashmiri I have never heard of some of these foods (I have never seen people making those goshtaba meatballs (gosht means meat) like that but the rest I do know of and I know of Kofta which is also meatballs but that is a meatball curry and is different) but it might be a thing in the indian occupied part because my family is from the mostly peaceful Pakistani side where I can't even recall any war happening anywhere near the region where my parents came from since I was born 27 years ago. Also my family's (the ones who came from Pakistan side) native language is Potwari and this guy was speaking either Urdu or Hindi (not that easy to tell both languages apart and some of the bigger differences tend to be mainly religious because we Muslims would use Islamic terms a lot when speaking even when conversing in English with one another)

      You said it, it's because you aren't Kashmiri.
      Kashmiri is, first of all, an ethnicity mainly prevalent in IOK. Whereas most "Kashmiris" which are spread internationally today are, in fact, Pothwaris, or Pothwar region Punjabi speaking people. Pothwaris constitute the majority of people in POK.
      Your "Kashmiri" identity is a remain of the erstwhile Jammu and Kashmir kingdom, which arose pretty close to your ancestors' homeland in Jammu. Mirpur, Poonch areas, like the Kashmir Valley (which is the "true" Kashmir), have been integrated in that kingdom, which was prominently focused on the latter and the Jammu region. That's why that "Kashmir" or "Kashmiri" self-identification prevail among the Pothwaris, even if they aren't exactly from Kashmir. Nor ethnically, culturally linked with people from the Kashmir Valley, who form a distinct ethnicity with its own history, own culture, own cuisine, etc.
      Personally, I think that many Pothwari leaders and intellectuals, as well subsequently the Pakistan government propaganda, have inforced that special identification to Kashmir. People taking pride on presenting themselves from the famed and great Kashmir, rather than the rural and marginalised Pothwar region. I think so because the Pothwari people case is the only one I know among all Princely states and Kingdoms of India, where people still identify themselves with so much "stressing" to a long ago disappeared "riyasat", who's legacies aren't that present or strong (especially in Mirpur, POK Poonch).

      That's not how it works, Four people are seated and 4 items per dish are put down so that everyone gets equal share but some dishes only put one item but that's also dived into 4 and if they don't eat it they can put it in a bag which is given and take it home, which is what's mostly done

    My wedding like 800 guests were there . Despite there were 2-3 wedding at the same day . Indian weddings are always grand . It’s generally 1000-1200 peoples

      those are wasps and honey bees, they are very attracted freshly slaughtered meat, plus they dont pose any threat to the meat and its washed many times before cooking

      they are not flies they are honey bees and they are attaracted to raw meat due to its colour and after all its washed several times before it is cooked
