Horchata de chufas is especially nice when taken with fartons; these are sweet pastry sticks, which are dunked into the drink. I've just returned to England yet again from Valencia (a wonderful city, especially during 'las Fallas'), where I've had horchata mumerous times (from shop-bought cartons/bottles and in a traditional horchatería). Delicious! I recently managed to obtain some chufas from a local health food store here in England, and have brought two packs of fartons back with me from Spain. So, I'm going to have a go at making horchata for myself. Thanks for your recipe.

Many years ago, I lived in Spain and was married to a Valenciano! The most memorable times were spent drinking horchata de chufa, granizado on hot summer evenings in Valencia! The horchateria also sold fresh lemonade granizado which was also very good!!! I was wondering if I could use tigernut flour instead since I have a good supply of it?
the problem with using tigernut flour, is that it´s dehydrated, when making horchate you have to hydrate the tigernuts to get the liquid out of them, I have never tried with the flour, So i can´t direct you in that direction, thanks so much for the comment :) much love from Spain!

Valencian horchata is amazing.You cannot go to Valencia without having some horchata. I've found Tiger nut's growing in Africa and in Thailand but never seen anyone else making Valencian horchata.
If you guys have some nutsedge growing in your lawn you got some tiger nuts for free. Tiger nuts are just the seeds of nutsedge or known as nut grass or water grass just dig around the plant on your yard, never pull as the tiger nuts easily detach from the roots once pulled by the stem. and enjoy your horchata!

When I was living in Spain, I made horchata with almonds and starch from rice. It tasted wonderful. Your recipe is new to me. I will try yours since it appears to be much easier but if it's not good I will simply go back to my Spanish horchata dating back at least 100 years ago...

It´s made with rice the latin America, but only with tiger nuts in Spain :) you might be able to get them on amazon or a local nut shop! much love

In all honesty, I have only made this drink with sugar, but you can probably substitute it for Saccharin, much love
