I have a question , what are the best pieces to cut on a Waterbuck. I personally like the mince and patties of an Eland. But what about the waterbuck?

This is an excellent video. I processed my own waterbuck a few years ago and was told the same urban legend about the skin - yes the skin smells strongly (thats no legend). The meat was some of the best I ever had (of all venison) however. The only issue a had - which I'm sure this taste test brought up - is that removing the hair from some of the "contaminated" meat can be a pain sometimes as their fur is quite long. Other than than there is no difference for the taste. Its an incredible meat and a brilliant species to hunt. Thanks for this video!

Very interesting. In British Columbia where I live and I think all over North America, we are told to be very careful dressing out deer, moose, caribou and elk, actually all big game, trying hard to make sure the meat doesn't come in contact with hide, and in particular with scent glands.
I've never considered doing such a test. Being careful with the meat has simply become second nature. I've never seen it done otherwise.

😂 U can't ask poachers to taste test... You needed 5 normal people on that table... Inconclusive
