My copycat recipe will give you super soft, cakey, and sweet sugar cookies with that addictively delicious classic pink frosting. If you’ve never tried Lofthouse Cookies before they’re not like classic sugar cookies but more of a cross between a cookie and a cake. They have the softest, melt-in-your-mouth texture and deliciously sweet frosting.

Dough:
- 2 1/4 cups all purpose flour
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tbsp cornstarch
- 1/2 cup unsalted butter (room temp)
- 1 cup granulated sugar
- 1 egg (room temp)
- 1 1/2 tsp vanilla extract
- 1/4 cup sour cream (room temp)
Buttercream:
- 1/2 cup unsalted butter (room temp)
- 2 cups powdered sugar
- 1 tbsp milk
- 1 tsp vanilla extract
- food coloring (optional)

I love Lofthouse Cookies- the icing is so cloyingly sweet which juxtaposes nicely with the nearly flavorless cookie. They’re impeccable
i feel like that's where all the flavor from those cookies come from, too. usually i taste nothing but frosting and the bits of cookie are just there for texture. still so damn good tho

[makes small circle with my hands] You know those sugar cookie shits with sprinkles and the frosting is like a different color? Yeah, those. I bought some". Now I can just be bougie and say, "why yes, I purchased lofthouse cookies".

Can I ask how your icing came out? Because I made mine, followed the recipe exactly and my icing was melty and wasn’t thick and stayed in place like his. Maybe I did something wrong?

You've just changed my life for the better. Growing up as a no-chocolate kid, these cookies to me were divine and I would *always* indulge on the rare occasions that I came across them at a party. Now you're teaching me how to make them in my own home? Holy cow. You're the best.

I have a stand mixer but it's hard to reach and heavy to carry to the kitchen so I usually mix stuff by hand, the hardest thing so far was whipping egg whites to stiff peaks with a whisk
I saved up to buy a stand mixer a couple black Fridays ago, was only $110 and very very worth it (im a baker tho so it depends on how much you'd use it)

@@Fleur2005 I’ve definitely used flour as a corn starch substitute. No idea how much it affected things. I don’t have potato or tapioca though…thanks for the suggestion though!

During high school I became aware of my gluten sensitivity issues so I had to stop eating a lot of things. These were the one thing I missed and had no clue how they were made. I tried this recipe substituting for gluten free flour, and they tasted just like the real thing 😭! I am planning to make them for the winter again, they are so good.

I made these for the first time today and I loved them. They are SUPER easy to make!! For the buttercream I only put 200g of powdered sugar and next time I might even put a little less. The full 240 grams (2 cups I think) would have been WAY too sweet for me. Besides that they’re perfect. 10/10 recommend making these, and it’s way healthier than buying them from the store bc they don’t have all that extra stuff added in for preservation and whatnot :))

I made these this summer for my nephew's 3 yr birthday party and covered them in sprinkles for him. He enjoyed them, but, he's 3. Our 15 yr old cousin Jesse really proved to be the family Cookie Monster as he gobbled them all up! Even the extra ones that didn't make it to the festivities. I was excited to make this recipe as I used to like those cookies from the grocery store, but the last time I had them, they were NASTY! They tasted like they were churned out of a factory that had just oiled down the machinery. These were delicious, the way a cookie is supposed to be :-)

Ingredients - Copied from the website in description (I edited it a little bit)
2 1/4 cups all-purpose flour (270g)
1/2 teaspoon baking powder
¼ tsp baking soda
1 tbsp cornstarch
1/2 tsp salt (If you are using a fine grain salt, like table salt, use less)
*Sift dry ingredients and whisk together*
1/2 cup unsalted butter room temperature (113g)
1 cup granulated sugar (200g)
1 egg room temperature
1/4 cup sour cream room temperature (60g)
1 1/2 tsp vanilla extract (7.5ml)
¼ tsp almond extract (optional)
Buttercream Frosting (Ingredients)
½ cup unsalted butter room temperature (113g)
2 cups powdered sugar (240g)
1 tsp pure vanilla extract (5ml)
2 tbsp cream or milk (30mL) (plus more if needed)
Food coloring (optional)
Sprinkles (optional)

Trader Joe’s ones aren’t bad.
Safeway version is tastes better than original.

Maybe you could try other buttercream frosting types for example the german buttercream ( you add cooled curstard into creamed butter and sugar ,this buttercream isnt too sweet and it is very stable)
That sounds good. I agree that American Buttercream can be overly sweet. I've made Swiss Meringue Buttercream Frosting & I love it. It tastes great & pipes well, (but it does melt in the heat) & it doesn't firm up, so it's nice for cakes / cupcakes, but not so much for cookies. It would be fun to try a German Buttercream recipe sometime.
@@miriamrobarts I hate American buttercream. It's grossly sugar coma sweet. I tend to stick with whipped cream b/c I can control the sugar content w/o impact to the texture of the cream.
Is the Swiss and German version regular sweetness and don't give you a sugar headache?
@@tweewin I love whipped cream, too. I agree that it's nice that you can make it with more or less sugar without really changing the texture, and you can adjust the sweetness according to whatever you're serving it with.
I haven't tried the German buttercream, but xxx 89 said in the comment above that it "isn't too sweet", so I'd like to try it sometime.
Yes, Swiss Meringue Buttercream is much less sugary & completely different from American Buttercream. (Well, as far as frostings go.) I love that it isn't overly sweet & it has a super-smooth texture. It's very light & soft. (It does firm up if you refrigerate it, though.)
It takes more time and effort to make than American Buttercream (& you'll need a mixer that can run for a long time), but it's definitely worth it. You can easily find recipes & tips on making Swiss Meringue Buttercream online, so you should try it!
Italian Meringue Buttercream is very similar, but if I remember correctly, the method is different in the beginning of the recipe. (Just looked it up: Swiss meringue is made by heating the egg whites with the sugar before whisking, and Italian meringue is made by drizzling a hot sugar syrup into the egg whites while whisking.) I prefer the Swiss method because it's easier, and the eggs are definitely pasteurized.
Swiss Meringue Buttercream pipes beautifully, and since it's less sweet, you can pipe a towering swirl onto your cupcakes & they will be deliciously eatable (no scraping off necessary!).
I made it for coworkers one time & they all liked it. One coworker who also likes to cook was very impressed & interested to learn about the recipe.
When looking up the Swiss vs. Italian difference, I found this article comparing several types of buttercream frostings: www.seriouseats.com/buttercreams-frosting. (I haven't tried any of these specific recipes, but when I've done searches in the past, all the Swiss Meringue frosting recipes were pretty much the same.)

I have used the Italian method of heating the sugar syrup for French macarons before, so I am familiar with that method. It wasn't super difficult honestly. I'm always in search of more creamed topping and want to find ones that I can control sweetness level.
When I was young living in Vietnam, my relative was a baker and she would always give me a whole bowl of leftover cream to eat. It was soooo good and soft, but didn't taste like whipped cream nor American buttercream. I have been in search of that same type of cream for over 25 years now. Maybe it's the Swiss one!
