With cashews, if you just blend it longer, you don't have to strain it. If you'd like to sweeten it, blend in 1-3 prunes or medjool dates. I like 1 part cashews (measure when dry) to 3 parts water. Makes a nice thick yogurt. I also add the contents of a probiotic capsule.
No probiotics?! How do I know if it's yogurt vs. went rancid ?

Why do you separate the PULP from the milk? Can you COOK and then ferment them together as one? Won't the result be thicker and creamier?
I realize this is a very old recipe. I'm wondering if I can ferment without a starter for all yogurts like coconut, hemp seed or sunflower seed? I add vinegar to my last cashew yogurt and it fermented nicely. All I read says to add a started but have come across 2 people that say you don't need a starter.
Why stain it.. I do not do that for my cashew milk is it really necessary.
