    Cooking time :- 110 Minutes then after Vinegar brush another 25 Minutes
    Sauce ingredients :
    Salt
    Pepper
    Garlic cloves
    Vinegar

    Gosch I thought only us Chinese cooked this.
    Here in New Zealand we have butchers soaking these in brine then boil them. They are amazing to carve up cold for sandwiches.

    Vesuvio Olive Oil.. aaay the memories. My dad was a manager on the farm, I was living there when the trees caught fire in 2015 due to dry circumstances and a worker throwing a cigarette bud between the leaves.. They lost a lot of trees.. My first time doing fire fighting also! What an experience.

    When did you actually do the smoking process ? I presume before the actual cooking period? A i correct?

    Did you add more coals to increase the temperature in your last stage of the cook or are you just controlling the vent ?

      Hi Roy I added coals to the Weber when I removed the Eisbeins to remove the skewers etc. Gave it about 5 minutes and then started the next stage of the cook (30 minutes). Hope this helps? Stay safe and thanks for the comment.🔥🔥😀

    your suppose to boil them to get the nitrate poison out - this is how i was taught by my Bavarian grandfather

      @@XmanCo Honestly, as a born and raised German, that is kinda "fanatical" about this kinda food, I kinda gotta agree with them to some degree. Up here it IS ment to be pretty much tender enough to not need a knife. I mean, the way you made it still looked bloody devine, and noone would scoff at it, but they do have a point.
