Bavarian Pork Knuckle / Schweinshaxe - Tony's Comfort Kitchen

  • This Bavarian pork knuckle or Schweinshaxe is absolutely delicious. German comfort food at its best. I'm adding this dish as part of a collaboration about American Thanksgiving celebrated around the world. I'm not sure the Germans eat this for Thanksgiving, but they do eat them by the thousands at the Oktoberfest in Munich every year, and that's not too far off Thanksgiving 😊 As far as I can see it is one of the quintessential German dishes. If you haven't eaten schweinshaxe then you haven't eaten German food apparently 😜
    Ingredients
    1 pork knuckle
    2 tsp caraway seeds
    2 tsp fennel seeds
    1 tsp black peppercorns
    A good pinch of salt
    3 carrots roughly chopped
    1 medium onion sliced
    2 bay leaves
    1 bulb of garlic cut in two
    500ml dark beer (preferably German)
    500ml beef stock
    Salt and pepper to taste
    Enough cornstarch slurry to thicken the gravy
    2 skewers to keep the skin taut

    Schweinshaxe pronounced:
    Schweins Haxe
    it means pork knuckle.
    I would never discard the carrots and the onion and the garlic. I would definitely eat those. 🥰

    We bavarians tend to have this with bread dumplings or potato dumplings and sometimes with hot sweet red cabbage 😊. Great job like you get it in bavaria. Best wishes to you 😊

    Hi Tony I have never tried Pork Knuckle before but wow that Crackling Looked amazing and the gravy you made looked silky smooth what a delicious combination of flavours huge big like from me my friend have a good week

      Thanks Andrew. I had to order the pork from my butchers as you just don't find fresh pork knuckles in the supermarkets. They are basically uncured hocks of ham

    Wow Tony!! That was so amazing to watch!! I have never in my life seen a pork knuckle and I have been cooking for 40 years! The way it crisped up in the oven was just amazing! and the gravy looked so good on top! well done my Friend! Great being part of this collaboration with you!

      Many thanks Karen. The pork knuckles here in the UK are usually sold preserved in a brine and called 'ham hocks', but this was fresh, I had to order it from my butchers

    Hey Tony, sorry I missed your premier but I'm finally here to catch up. What an amazing recipe, I've learnt something new. I would skip the stabbing step though coz I'm so scared of knives and hospitals 😂😂😂

    Wow, this looks really good 😋 Here in Sweden it's kiiiind of a tradition to serve pork knuckle along with "rotmos" which is a mash of potatoes, carrots and Swedish turnip. I think it would be perfect to have along this one 😁

    thanks for showing something new Tony. I've never heard of a pork knuckle but you've certainly made my mouth water. I'd love to try more German food, I don't know much about it. Loved watching this come together, really making me hungry and I bet that would be insanely good! Well done!

      To be honest I don't know too much about German food either. They do love their meat though! This dish was delicious. I bought three knuckles, this was my second one. I still have one left, so come on over 😃
