    Below is one of my favorite oxtail recipes. Enjoy!
    Jamaican Oxtail Stew
    Ingredients:
    • 2 lbs oxtail, cut into pieces
    • 1 large onion, chopped
    • 2 cloves garlic, minced
    • 2 carrots, sliced
    • 2 stalks celery, chopped
    • 2-3 sprigs fresh thyme (or 1 tsp dried thyme)
    • 1 Scotch bonnet pepper, whole (for heat) or seeded and chopped (for less heat)
    • 2 tbsp tomato paste
    • 1 can butter beans, drained and rinsed
    • 4 cups beef broth
    • 2 tbsp soy sauce
    • 1 tsp browning sauce (optional, for color)
    • 2 tbsp vegetable oil
    • Salt and pepper to taste
    • 2 green onions, chopped
    • 1 tsp allspice
    • 1 tbsp brown sugar (optional)
    • Cooked rice or rice and peas for serving
    Instructions:
    1. Marinate the Oxtail: Season oxtail with salt, pepper, and allspice. Let it marinate for at least an hour or overnight in the refrigerator for best results.
    2. Brown the Oxtail: Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the oxtail pieces on all sides, then remove and set aside.
    3. Sauté Vegetables: In the same pot, add the chopped onion, garlic, carrots, celery, and green onions. Sauté until the vegetables are softened.
    4. Add Tomato Paste: Stir in the tomato paste and cook for a couple of minutes until it darkens slightly.
    5. Deglaze and Add Liquids: Return the oxtail to the pot and add beef broth, soy sauce, and browning sauce (if using). Add the thyme sprigs and Scotch bonnet pepper. Bring to a boil, then reduce heat to low, cover, and simmer for about 2-3 hours until the oxtail is tender.
    6. Add Butter Beans: About 15 minutes before the stew is done, stir in the butter beans and brown sugar (if using). Continue to simmer until the beans are heated through and the stew has thickened to your desired consistency.
    7. Adjust Seasoning: Remove the Scotch bonnet pepper (if kept whole). Adjust seasoning with salt and pepper to taste.
    8. Serve: Serve the Jamaican oxtail stew hot over cooked rice or traditional Jamaican rice and peas.
    This hearty dish is perfect for enjoying the rich, deep flavors of Caribbean cuisine. The slow-cooked oxtail becomes tender and succulent, while the spices and Scotch bonnet pepper add a delightful kick.
