Best woods for smoking include:
1. Oak. Good wood for new smokers. Medium strong flavor. Good for lamb, beef, brisket, and sausages.
2. Hickory. Most versatile. Too much smoke will be bitter. The smoke though is sweet, savory and hearty. Good for ribs, pork shoulders, red meat and poultry.
3. Maple. Subtle smoke. Sweet, light mild. Good for poultry, pork, foul.
4. Mesquite. Hardy with intense flavor, use modestly. Good for red meat.
5. Pecan. Rich, sweet, nutty flavor. Good for briskets, roasts, and ribs
6. Apple. Mild, sweet, mellow. Good for chicken, wild foul, pork.
7. Alder. Light, sweet, delicate. Good for fish, like salmon, trout.
8. Cherry. Mild, fruity. Good for chicken, turkey, ham.

A smokehouse is a small building where meat or fish is cured with smoke. Smoke works to cure and preserve the meat for long term storage without the use of refrigeration. If done correctly, smoked meats can last without spoiling for up to a year or more.
In traditional use, smokehouses served as a place to both smoke and preserve meat, but also to store it for long term use. In long term storage, salt and smoke were used in combination to effectively dry and cure the meat by removing all or most of the moisture. This prevents bacteria and molds forming which destroys the meat. Some houses also ward off animals from accessing the meats as smoke makes the environment inhospitable.
Before modern refrigeration and freezers, salting was a mainstay.
Various woods can be used for smoking, but all should be wet enough so that they burn cold and inefficiently. These woods will produce incomplete combustion - smoke. Apple wood, cherry, some spruce and alder make great smoking agents and impart nice flavor to meats.
A smoke house is a simple small box, or house with a vent at the top, not air tight. Wood is placed in a lower box and piped in to the space to encircle the meats. Wood is burned slowly, but persistently over time. Meats can be smoked for hours or days depending on personal reference and types of meats, cultures and desired use.
Over time, the smoke house will blacken, further protecting the smoke house from pests.

This channel will approach self reliance from a modern perspective. and will focus on various build projects using modern amenities, and tools to build a completely self reliant lifestyle.

Why not put a hole in the door or the wall to put the thermometer through? Then you can just see the temp from the outside without opening the door
im coming from an area where in former times lot of buildings were clay-based. If the clay-builders use unprocessed clay (like you did) and water the clay, they let the clay rest at least for three days. the longer the better. doings thus the water gets uniformly sucked up into the clay leading to a homogenous mixture with no pats. using that homogenous mixture will cause less cracks in the finished pflasterwork. just in cause that problems occure later on.

I wanted to pair this with an updated book on local codes to start planning a post-retirement dream shop. I think I have just about everything I need between the two. The extra plans available for purchase towards the end are priced almost as much as full home plans, not little sheds however.

Kev...,you did it !!! That came out incredible.....on your firebox door make some adjustable vents like on a woodstove to help with air.....but ya dude that will help cure meats and fish! I have upper adjustable vents on the box like where your cuppa....whatever thing is.....Impressive project👍

Great vid! The key to a successful smoker is to build the worse fire! I love that! So far, everything is about utility. Are you planning on building something for leisure or relaxation? An outdoor wooden tub/hot tub? You said something about a yoga/tree stand. How about a zip line to send supplies back and forth from the road? Keep those projects coming along! full stop

I do love fishing. But not sure why, most of Chris videos about fishing don't really do it for me. Don't get me wrong, I'm still going to watch them, but...
For my own viewing taste, I like watching within a wilderness survival challenge. I really enjoyed Fowler's and Oven's 30 days wilderness challenge in the rockies...and there was a whole lot of fishing in that. I mention that cause I heard Chris is going up in the fall. Can't wait to see that!

Any cabin will do or even barrel for smoking(with lidd), must important is long 2yards ground tunnel joining smoke House made from bricks or rocks. Apple wood and forest juniper bushes is best for nice smoke.

Your pizza oven is Awesome. An idea is to find round or circular screen rings or even square. Most pizza makers have these to put the pizza or other things used to put pizza on while baking makes it easier to remove and keeps it the food off the ash or dirt. Also if you can find or build a stainless steel flat spatula with wooden pole attached to remove your baked items. Enjoy

If you get an old mop that has natural fiber, you can get it damp (do not use cold water), and mop out the over after you scrape all the coals to the side. That will get rid of the ash, and add some humidity to the oven. It prevents scorching too. The bottom of the oven will dry almost instantly.
