It's more like a stroy telling from my interpretations
His scars were most evident during his peak rage. As now he's gradually becoming somewhat calm and reasonable so his scars are diminishing and so does his his skin colour.
It possibly describes how he's learning to leave his past behind slowly and accept a new family and friends he's got in norse saga.

I think after a 1000 years your scars wouldn’t exactly remain visible. And the developers have even confirmed that krato’s white ashes are disappearing, and fan have speculated it is because he left his past behind him and accepted it.
