    Made my mouth salivate there at the end with that piece of chicken that was attached to that beautiful brown skin. Bite sized. Could almost taste this dish thru the video. lol. Looks amazing.

      @@Delicious1 did a trial run today. A friend liked it. Happy to share some modifications I made to the recipe :
      1. Made a simple rub of garlic, cajun and smoked paprika powders BUT didn't put the garlic herb butter spread on top of the skin (took a risk)
      2. Had no fresh rosemary, so had to use dry ones. Pre roasted the rosemary on a hot pan before putting it into the butter
      3. Put a few pieces of garlic into the cavity on top of the lemon.
      4. Sautéed the following vegetables: yellow capsicum, onion, Swiss brown mushrooms, carrots, potatoes with a touch of sugar, Worcestershire sauce, butter, salt and pepper (Chinese style, high heat in a wok)
      5. Dropped the covered cooking time by 5 minutes and the uncovered cooking time by another 5 (I suspect I may have preheated my Dutch oven wrongly by leaving the lid open)
      6. Forgot to put the lemon juice into the herb garlic butter mix. Still turned out alright.
      7. Glazed it with honey at the end.
      Turned out alright. I might drop the oven temp to 200 C in my context for the next run.

    Beautiful video, thank you, want to try this! But the cooking times in the video captions and the cooking times in the description don’t match up 🙂 Caption says 40 mins, description says 30. Caption says 45-50 more, description says another 30. Caption says to remove lid in the last 15 minutes, description says to add 15 minutes more without the lid. Can you please review and reply what the actual times should be? Thank you very much for this video!

      Fixed it! It is one of the very first videos and a lot of mistakes were made back then 😊
      It would work both ways anyway, the time difference when added up is only 10 minutes. It really depends how you like your chicken, some people aim for internal temp, I like my chicken to fall of the bone done.

    First video I've ever watched on your channel. Never heard of you before, and I'm kinda shocked as to why that is.... Your videography alone is worth the view. Great job, don't know how the chicken tastes, my initial thought is "trapping the steam in the dutch oven will prevent the skin from crisping", but I shall try this tonight to see for myself!

    What size/capacity dutch oven do you use?
    Shopping for my first Dutch oven but have a very small kitchen/cook space, yet would love cookware just large enough to cook a whole chicken.
    P.S.: wonderful recipe, will def try once I secure the right pot. ;)

      Mine is not very big, 10 inches 25 cm., but is enough for our family, if you think is too small, get the 12 inches 30 cm it makes quite a difference, I have one in that size too, I use it outdoors, when we cook for more people.

    Hello there! I can’t wait to try your recipe, it looks so delicious! 😍
    Please could you let us know where you purchased your internal trivet from, or what you would recommend to rest roasting meat joints that won’t scratch/damage the internal seasoned coating of the Dutch oven. I’m trying to be mindful of the high internal temperature that the Dutch oven can reach and finding a non-toxic trivet that can reach maximum temperatures to suit. I’m moving away from using aluminium for baking these days. Thank you! 🙏💗

      To tell you the truth, I can`t remember where I got it from, it has been home for a long time. Try to look them up on amazon. And you are right, stay away from aluminum foil, I sometimes use it, but never with direct contact with the food.

      If you have an Instant Pot you can use trivet that comes with it.

      @@tinagiles3430 thanks for replying, unfortunately I don’t own an Instant Pot, I do have an Intellichef, but the round trivet that comes with it is plastic! Although I know it won’t scratch the internal seasoned coating of the Dutch Oven, I don’t know if it will sustain the high temperatures reached?. I have been looking on Amazon for inspiration. If anyone else has purchased a trivet that doesn’t scratch the internal base of their Dutch Oven, please do let me know! Thank you! 🙏💗

      @SMarsh you can also use the rings from Mason jars. Just put in however many to cover bottom.

      Mine is not very big, 9 inches/23cm in diameter, but is perfect for a family with 2 kids.

    What weight is that chicken? It looks quite small. Our chickens are usually around 3kg (I'm assuming a large chicken will need more time in the oven). Thank you.

      You are right, it was about 1,5kg/3lbs. It will definitely need more time and a bigger Dutch oven.

      @@Delicious1 Sorry, typo, I meant 2kg - 2.5kg (not 3) -- so it will fit in my Dutch oven but I will cook it for a little longer. Thank you Delicious. (also looking forward to trying your Beef Stew in my Dutch oven). By the way, my Dutch oven is still in the box (wedding gift 30 years ago) - will have to let it see the light of day and the inside of my oven after watching your videos. Have subscribed.

      Not for 40 minutes. Only for a few minutes, so they can get that nice golden color.
      They will cook in the Dutch oven.

    Most Dutch ovens can only take 200 deg c

    Breast of chicken is definitely over cooked. With a Dutch oven the chicken should be breast side down.
