    I started cooking my steaks in beef Tallow and love it.

      Agreed. I also use it to fry potatoes.
      Amazing! Beef tallow is the best.

    "... sometimes simplicity is just that. " - Love it!
    This is a great pan sauce. I've tried it before and it works every time!
    You know, in addition to what you already pointed out in this video as to how long to cook it, one thing I've seen is that one person's idea of rare, medium rare, etc. can be quite different than another's . I've seen what I consider to be a perfect medium rare sent back because it was too red in the middle for that person.
    Folks, just give it trial and error, pay attention to what you're doing, aallow it 10-15 minutes to rest and enjoy your steak.

    For seasoning, I like the McCormicks Montreal seasoning. In my pan sauce I saute half of a finely chopped shallot and use Marsala wine. And of course reduce it like you did and top off with a bit of butta.

    Adding a little gelatin gives it a fantastic texture. It's a component of beef stock anyway, so you're just increasing the ratio.

    I love sauce but I never can make it because grilling is 10 times better than pan frying meat.

      You would prefer lean cuts like a strip or flat iron steak on the grill over searing? Use that propane to fire up a cast iron skillet and cook a steak exactly like this guy did, with or without a sauce. You won't be disappointed.

      You could cook the meats on a tinfoil sheet and add the leftovers to a pan with all the bits of course. Just a 🤔

      I get what you're saying, because there's only one way to get that magical "char" flavor and texture, and that's to grill it.
