    We are gearing up to do a food ministry through our church. It’s our responsibility to pick up a bag from the food pantry, come up with dinner menus for a week, purchase additional necessary food and deliver to a student to take home. This is exactly what I needed to see. Thank you!

      Awesome idea! Most people just don't know what to do with what they have! Recently used leftover mashed potatoes to make potato cakes.. which served as a hasbrown substitute for breakfast for dinner!

    Yes please keep doing the 20 Ingredients capsule meal plans as it is really helpful especially in the economical climate and eventually people will have a large list of recipes without food boredom! Four seasonal capsule meal plans would be helpful, thanks for all you do!

    Mindy, I say this with so much affection: you nerd! I love that you did this project. Your enthusiasm about this concept is so delightful and infectious. I think this is an amazing idea! Along with budgeting, I think it could be so useful in training yourself how to use food you already have on hand so that you don't let it languish in your cabinets and fridge. If people are stocking their kitchen with the same limited number of ingredients most weeks, and you know the ingredients can work together to make over 20 recipes, it's encouraging to use what you have on hand before it spoils. Learning how to bring ingredients together like you do in your pantry cooking videos is really skill that some people might have a knack for, but it can be learned with a great demonstration like this one. Congratulations on completing this project! I hope you feel really proud about what you've accomplished.

    I would love to see more of these! If your family eats cabbage, that’s an ingredient I’d be interested in seeing you include… it is very healthy and often on sale for very cheap, but as a single person it’s very stressful to try to use an entire cabbage!

      Cabbage is a perfect staple for every household - even for singles. It is so versatile and you can easily use it instead of salad, put it in stews and soups or as a simple side either raw or fermented. Fermented it keeps forever :)

      @@laifnow My main weakness when it comes to cabbage is that I don’t like coleslaw, haha. I have accumulated a number of good cabbage recipes at this point, but I am always looking for more to ensure variety. Which is why, if Mindy is interested, I’d love to see her take!

      I absolutely love cabbage, and as a one-person household it's become a grocery staple. I use it in place of lettuce all the time -- on sandwiches and in salads -- and I love that it's crunchier, more flavorful and more nutritious. I also routinely toss it into soups and other hot dishes. I always felt bad, though, if I couldn't use up a whole head or bag of it before it started to turn, but then a couple of years ago I learned you can just stick chopped cabbage in the freezer. You don't even have to cook it first. Defrosted, it's perfect for adding to soups or other cooked dishes with no loss in flavor. So now I have my fresh stash in the fridge for salads and sandwiches and my freezer stash for soups and other hot dishes.

      @@laifnow You're very welcome, and I appreciate your tip about how to soften whole leaves to make wraps. I love wraps, but have normally made them with those big tortilla type wraps, and then it makes too bulky a sandwich for my appetite. Plus cabbage wraps wouldn't have to be just for sandwiches, since they could be used for baked cabbage rolls. Yum! 😋

    I'm teaching basic skills at the library once a month. We are learning about meal planning for October. Capsule meal plans like this are so helpful for people just learning. And by changing the pasta to rice I have a dozen different meals easily. Thank you.

    Yes! Two weeks of cheap and delicious dinners. Please do more of these. If I could shop every 2 weeks and have a plan, that will be life changing. We actually have every ingredient on the plan except sour cream because I ran out.

      Cream of soup is very easy to make. 2T each butter and flour (I use rice flour because I need a GF sub). Melt butter in pan and whisk in flour. Cook for 30 seconds or so. When all bubbly, whisk in 1-2 C milk depending on the consistency you want. Season with a little chicken bullion powder and salt and pepper to taste. For mushroom soup sauté some chopped mushrooms in the butter (I usually use a little extra butter) before adding the flour. Then leave out the chicken bullion.

    Salad shrimp is a really affordable ingredient that you might enjoy creating a recipe for. Imitation crab goes on sale alot too.

    I recall learning in the early ‘70’s. Perhaps ‘71. From a textbook written, I’m sure from the ‘50’s or ‘60’s, a recipe called Master Mix. Think of today, as compared to Bisquick or a store brand, of such. I think that’s helpful to todays crazy food prices. Happy cooking, & Baking!

    I love this idea! We often buy bulk and I have trouble thinking of different ways to use things up, and end up making the same things over and over. Only thing I would change about this video is seeing the grocery haul all at once, instead of just listing the ingredients.

    Love this idea! How about doing this for shelf stable meals using dried potatoes, beans, rice, boxed mixes, canned salsa, etc. Maybe some soup and sauce recipes.... The list is endless, lol!

    I'd love to see more of these, a week at a time. Low budget using only a basic crackpot and electric skillet. I have friends currently living out of a hotel room. Family of 4, and only have a very small mini fridge.

    3:16 and I’m already so into this. You addressed budget and space benefits for this but what I see is convenience grocery shopping! Baby #1 is due in just about 2 months and I’m already a “lazy” grocery shopper. I have a lot of weeks when I just run to the grocery store and grab a few basics and maybe some sale items and just hope I can get by. This could be a great go-to shopping plan for weeks when there’s no time for meal planning before shopping!

    My family and me truly enjoy your extreme and basic budget planning meal videos. It has saved us at times when money was tight and with the increased food prices it helps to substitute these meals in a week to help bring cost down. We just recently went from a family of four to a family of three and I have struggled meal planning since. My oldest is off to college so any way we can save some money but still have good meals I am all for it it. Please keep making more! I appreciate what you do. God bless you!

    Excellent ideas! Another capsule challenge could be a vegetarian one? Say, using lentils, beans and tofu as the protein sources? (I know there are all-vegetarian channels, but I like your recipes best.) :)

    I do this. I keep the things I use stocked in my pantry. I mostly shop sales and clearance. For the most most part I could eat what I have for a month or so. Longer would be more basic meals. Every so often I try to limit my spending to milk and maybe as couple really good deals. But, I have stopped in just for milk, so I could use stuff I have first.

    Spam and onions for yor scalloped potatoes , fried potatoes onions spam. Spam fried with your scrambled eggs. Fried spam and cheese with lettuce and onions for lunch

    Very good planning and ideas, good tips with the green chili chicken and the peach crumble, I used the whole package and never thought of dividing it, now i can and have 2 with different fruit and instead of melting the butter now I can make the crumble with it. Thank you!

    Just a thought and not a ridicule, try turning down the temp when you bake a poundcake. They take a long time to bake. I make mine from scratch using a one hundred years old recipe. I bake it at 325 degrees for 1 1/2 hours. I start checking 15 minutes before that, just to make sure it hasn't cooked faster. It's divine and always requested by my seven grandchildren. Thank you for all your wonderful videos. BTW, I volunteer at a food bank and often refer clients to your vlog.

    This is amazing because you could add these items to your "stock-up" list. Meaning, when these items go on sale, do a big stock up and always have things on hand for meals. Something I've never thought of before.

    This is so amazing for cooking for one-two people! One of the biggest struggles is buying an ingredient for one meal and then it just sits in your fridge or pantry waiting to be used again. I love this for helping with food waste!
