- Stir fried potatoes broccoli with peppers and onions make a sumptuous side or vegetarian dish for a perfect week night dinner or lunch. The addition of fresh herbs to the recipe elevates everything.
INGREDIENTS
2 Tbs Olive oil, more as needed
6 - 8 Medium Yukon Gold potatoes, peeled , cut bite size.
! Red bell peppers, cut into thick buttons
1 Yellow bell pepper, cut into thick buttons
2 Cups Broccoli florets
1 Tbs Garlic, chopped
1 Tbs Fresh thyme, chopped
1 Tsp Fresh rosemary, chopped
1/4 c Fresh parsley , chopped
Salt and pepper to taste
1 Tbs Extra virgin olive oil for finishing

I´m from Germany and I like the recipes you present very much. I would call it "light kitchen", so I´m not vegan or vegetarian, but I like things easy and healthy, and not with a mass of grease or fat as sometimes served over here. It must be good for the stomach and not a "heavy meal" 🙂
