You could use the shape builder tool to erase also with the blobush you just need to uncheck merge together and then lines are separate, much better than eraser
This works great for art, desktop or print. but make sure to not have overlapping objects and too many points if you’re making something for vinyl or laser cutting. People love to clean up a designers mess in those fields /s
I agree fewer anchor points are better. Prepping an image like this for a specific printing purpose warrants a whole other video or series. This is as you said targeted towards learning the basics of this illustration method and not necessarily final application.
It's much easier to use the pen tool from the beginning and create all the elements as shapes. The fastest way and also you can control all the points by yourself
