- Crunchy yet soft, sweet yet bitter and utterly delicious... these chocolate encrusted cookies harbour a marshmallow centre. Easy to make, and even easier to eat.

For between 15-18 you'll need:
200g Dark Chocolate
250g Plain Flour
110g Butter
1/2 Tsp Salt
3/4 Tsp Bicarbonate of Soda
100g White Sugar
100g Light/Soft Brown Sugar
1 Egg
1 Tsp Vanilla Extract
175g Peanutbutter

Hint for those with nut allergies: there is a brand called Eskal that produces a peanut-less peanut butter (with sunflower seeds). I'm told it tastes identical to peanut butter!

O wow, mmmmmarshmellow! These were made as soon as I came back from the shops with the "stuff" to make 'em. DELICIOUS!!!! Poor squeaky squirrel Syd! x
+0003Zeb Hahah Syd is amazing on that front. Calm as anything, but when she was younger if she saw a squirrel or a deer - she'd be straight after them. NEVER a single chance of catching one, and if she did, think she'd have just licked it, shouted 'you're it' and then run off in the other direction!! We used to go for walks in the Cotswolds with her, we'd do 5-6 miles, she'd do about 30!! running. haha. So it was lovely to see, as she ages, some of her puppy spirit comeback for the squirrel! haha xx
Hi Sacha and Minion, loving the out-takes at the end of the video, could that become a regular feature?? These cookies look really yummy and goowee and scrumptious, and I think I actually gained a pound just from watching the video... I've actually seen cookies made just like these this week only they put a Rolo in the middle of each cookie. I think they may be too sweet for me, but yours really do look nice and chewy with the march mellows... Hope you both had a brilliant Christmas and New Years.. +Hannah Tozer They're so good - you'll love 'em. It was just regular granulated sugar - you may know it as white sugar? (larger grains than caster) but in a push, caster would work too - just caramelise a bit more quickly at temperatures, so they may be crunchier.
Bloopers at the end are fantastic!!! Almost missed them- love your sense of humor. Sydney dog looks like a puppy with her enthusiasm for annihilating the squirrel. As usual, cookie recipe is special- have never had a cookie with a marshmallow in it- great addition.

Holy cow. When I first saw that egg, I thought it was from China. I had to pause the video to see that it was upside down. Don't I feel silly for admitting that? Great recipe. I kind of don't like the idea of having my balls squashed, but you're the expert, so who am I to question you? Thank you. And I LOVE the bloopers!
+Thaneii Yeah our eggs are well clever - even before they hatch they can speak several languages! haha .... If you had marshmallow in your balls, it wouldn't be nearly such a traumatic event (so I'm told!) haha.... and yes the bloopers are often tagged on the end, if we think there are enough of them to make it worthwhile, as a treat for anyone who hangs on in there until the end!

+SushiLover1990 She is still like a puppy though she has now (at 13) gone deaf and lost some of the power in her back legs, but seeing her playing like this takes us back to when she first came into our lives .... all those years ago! haha. The bloopers? we add those at the end whenever we can - a secret treat for anyone who watches to the end! haha : )
