Wow. Never knew i can use white modelling chocolate in place of fondant. Can i use the modelling chocolate in the same way as fondant to cover the cake. Like making a huge circle and cover it from above and sides?
The draping will be tougher as the modelling chocolate is not as flexible as fondant. But you can mix fondant and modelling chocolate 50:50 and proceed as with fondant. It will be more flexible and tastes awesome.

Modeling Chocolate will taste better than Fondant. Take in consideration also that Fondant is yes edible but doesn't mean it really needs to be consumed. That is why there is a crumb coat and filling. If you eat everything including the outer cover of the cake be it fondant, icing or modeling chocolate it is natural that flavors will be either too sweet or have a bad taste. In short it is really for decoration.

Ganache is Compound Chocolate + Heavy Whip Cream with at least 35% Fat Content. The ratio depends on how hard you want your Ganache to set. More Chocolate than cream will be hard to hardest. More Cream will be of course opposite. I use 3 parts Chocolate to 1 part Cream by weight. Boil the cream and pour over chopped chocolate pieces and wait until almost all chocolate is melting. You can then use an immersion blender and strain the ganache. Let it cool down until spreading consistency of peanut butter.

May be there is too much glucose in your clay recipe. It makes a very soft clay which might be hard to handle. Try using little bit less of the syrup.

Modelling chocolate is combination of chocolate and glucose syrup. Fondant is icing sugar, gelatin and corn syrup dough. Both are totally different.
Can I use Dark Liquid syrup.
I have only used glucose. So no idea how it will work..
