does the foam help the switch sit securely on hotswap PCB without plate?

No. The effect here is that when there is a new, fresh, PCB board, the switch holds up very well.
I did a build on stream without foam at all. The sound is simply too loud. Lots of overtones.
So for the typing video here I have already done it with foam.
