I am working on learning honey skip, but keep dying with the cutscene trigger, it still triggers the cutscene, but I don't get the skip. I am on 3DAS, but I don't think that would really effect it. Any tips?

whats the point of the 1 second hover before side stepping when you are doing honey skip

It's so that you can land in the "dead zone" in a precise spot and begin moving at a consistent time. If you just walked or jumped to it, it wouldn't be consistent. That's just how precise the trick is.
