- I really hope you guys like this recipe! This is one of my family recipes as a kid that I thought I’d share with you all. It’s simple & easy for any weeknight dinner.
Ingredients Spam&Corn:
Spam (lite)
1 Can of corn (W/the juice)
Onion
Tomato
1 box Tomato Sauce (Del Fuerte) 1tbsp
1tsp Chicken Bouillon
Ingredients Macaroni & Cheese:
Large elbow macaroni
2 boxes tomato sauce (Del Fuerte)
1/4 cup of Sour cream (more or less up to you)
1-2 cups of Medium Cheddar cheese
-Remember the more you add the creamier.. just go with what works best for you
1 tsp Chichen Bouillon
Pepper to taste

Thank you so much for these recipes. Due to the current situation our budget is adjusted. Your recipes are very wallet friendly for us and for some neighbors who are REALLY down on their luck! 2 recipes fed us and 6 neighbors. We added in some garlic bread and a quick dessert. Everything from our pantry and fridge. We figured it cost abou t $10.

How about a mashup by combining the Spam, tomatoes and corn from the skillet to the mac and cheese in the pot. Then pour into a baking dish, top with more cheese and bake until heated through. Serve with a simple side salad and you have a balanced meal.

Definitely going to try the Mac n cheese. I think the spam would be great over rice, I make a similar recipe however I use green beans instead of corn. I’ll have to try this too. Thanks.

Definitely going to give the spam recipe a go. I love spam and beans anyway. Unfortunately (or fortunately, depending on your perspective) the influence of my English-born Indian wife means I will be adding about a tablespoon of garam masala (my go to spice for many occasions).
I would add some chopped green chiles to that macaroni.
TFS I was looking for quick & easy meal ideas this looks yummy.
I typed this up for myself and thought maybe others would like it so you can quick print this in case you cant watch the video while cooking it. (I did add a couple dummy notes so disregard those if you want)
Ingredients
Spam & Corn:
1 T oil
Spam (light)
1 Can of sweet corn (with juice)
¼ small Onion diced
1 Tomato diced
1 T Tomato Sauce (boxed Del Fuerte is suggested)
1t Chicken Bouillon powder
(maybe try adding some smoked paprika??)
DO NOT ADD SALT
Heat oil over med heat in a skillet. Saute until some fat comes out and gets some color (about 5 mins). Add onion and tomatoes. Saute for a few minutes until soft. Add can of corn with juices. Add bouillon powder, tomato sauce and pepper. Cover with lid, lower heat to low-med. and simmer for about 15 mins.
Macaroni & Cheese:
Large elbow macaroni
15 oz tomato sauce (boxed Del Fuerte is suggested)
1/4 cup of Sour cream (more or less up to you)
1-2 cups of Medium Cheddar cheese
-Remember the more you add the creamier.. just go with what works best for you
1 t Chicken Bouillon powder
Pepper to taste
DO NOT SALT until you taste test
Cook noodles according to package. Drain and add tomato sauce and sour cream. Stir together to see if you need more sour cream. Once the consistency you want add shredded cheese, bouillon power and pepper.
Serve side by side.
OR SERVE IN TRASH CAN!!!!!

It looks weird and possibly cheap to some people but for anyone working on a budget or just lookin for something that tastes so good for not a huge buck, this one's a win for sure.. my family and I love it.

My grandmother used to make it with salsa del pato (yellow can with duck ) spicy but delish with some torts de maiz....mmmmm I miss my abuela😔 but good ole school grubbin😉

If you like greens ? Try adding Cut green beans or French cut green beans to your spam and tomato and corn dish .....and for a soup of some kind chopped cabbage , chopped spam with little water and little light soy to taste and whatever spices if you want try ya ?? Valerie IRL basic Mac & Cheese, add cubed fried spam. Change up time to time, will also add chopped fresh tomatoes w/the spam, even done the frozen corn, try to stay away from the canned stuff. Side note, spam, potatoes (both cubed) with diced onions, garlic, pepper & salt, great for breakfast with a fried (or your favorite way) egg. ❤️🤙🏼🤠

I'd drain some of the fluid off the corn, way to watered down, also use some other seasonings then Chicken Bouillon, many come to mind.

Do I detect the bottle of Knorr Pollo bullion powder? I keep at least two large bottles of this in my kitchen cabinets at all times. Have you tried Knorr chicken with tomato powdered bullion? It’s fantastic. Has that extra kick
